The challenge is real. We started growing in Nevada and when we moved to Florida, we were shocked at the difference. Using cinnamon when we first hydrate the cooc coir has helped a lot. Good circulation with a fan in the room really helps. And when we see any signs of mold, we use 3% food grade hydrogen peroxide. Every once in a while, we still end up throwing a tray full out. Getting on that early helps keep the mold from spreading.

I live where humidity is 4% to 18% not such a problem with mold etc
