Fudge (Vanilla and Chocolate) Recipe

- Fudge is not too difficult to make and makes a great gift for friends or family.
Ingredients
400 g (14 oz) caster sugar
150 ml (5 fl oz) whole milk
200 ml (7 fl oz) condensed milk
100 g (3½ oz) butter
1 tsp vanilla essence
Instructions
Add all the ingredients into a pan and heat over a low-medium heat with continual stirring.
Once all the sugar has dissolved, increase the heat. Cook the mixture on a rolling boil for about 15 minutes.
Check the temperature with a sugar thermometer. What do you mean? You haven’t got a sugar thermometer?? Get one! When the temperature reaches 115°C turn off the heat and allow to cool for 5 minutes.
Grease and line a 7-8″ (18-20 cm) cake tin with baking paper. Grease the baking paper. Take a baking tray and pour in about ½” (1 cm) of cold water.
Place the pan of fudge in the baking tray of water. Stir continuously with a flat-ended spatula until the fudge has lost its glossy shine.
Pour the fudge into the cake tin and smooth out. Chill in the ‘fridge overnight before cutting into squares.
Titli's Tips
If you don’t have a sugar thermometer you can check the consistency of the mixture by dropping a teaspoon of it into a bowl of cold water. You should be able to make a soft ball which keeps its shape.
If your fudge wont set overnight put it into a saucepan and gently reheat it. Boil for a bit longer until you achieve success with the softball test.
To make chocolate fudge add 60g (2 oz) of cocoa powder to your list of ingredients at the beginning.
I have a complaint about this recipe. It was so good that my family was complaining because the recipe just did not make enough. HE HE. Thanks for an awesome recipe, worked a treat.

Titli, my fudge was done cooking in only 5 minutes??? I used a larger pot because i doubled the recipe, but it reached the softball stage in only 5 minutes! It was absolutely delicious. I added peanut butter to one half and cocoa to the other

Success once again. :) I added three tablespoons of clotted cream and its less sweet, more creamy, and holds together perfectly.
I made it and put it straight in the greased pan while still melted and let it cool on the side then put it in the fridge , it came out really smooth and yummy
@scubielouie There is actually a difference between extract and essence. Extract is usually an alcohol-based solution while essence is usually a vanilla-flavoured sugar solution

@Svetassimplefun It will work with normal sugar. You might just need to mix the dough a bit longer to get it smooth.

Being Scottish, I have always made tablet which is similar to fudge. I was looking for this recipe I had come across some years ago. I didn't realise how many TBK recipes you had done. U make it look so easy. I have made two lots tonight and both have gone wrong in the fridge now so we will see what they are like in the morning. it's was crumble like. I am waiting on thermometer so will try again when it comes.

Condensed milk usually comes in a can and is very sweet.

Add less milk and a bit more condensed milk to quicken the thickening process..this recipe took me more than an hour...but worth every minute!

I must say though, i found mine to be a little on the grainy side, to make it more creamy would I be right to say add more milk and less sugar? or what have I done wrong do you think? would appreciate it soooo much if you replied! :D
Hi! I suggest you to google for "do it yourself vanilla extract". You will find instructions on how to make your own extract, at least the vanilla flavour. You need strong alcohol (like Vodka) and vanilla beans (= dried vanilla "sticks"). You basically just let the vanilla flavour soak into the alcohol for several months. I've made myself some vanilla extract this way. It's ready now, but I haven't tried using it yet. I think it will work, though! Good luck.

Your fudge is mouthwatering! Since I am a sloth, I immediately noticed that the last stage (where you immerse in a tray of water and stir and then spread the mixture out) looks like very hard work. How about just pouring the hot mixture into the greased tin and letting it spread out by itself? Ever tried that? Is stirring while it cools essential to the final texture?

Thanks for this video! Made a batch the day before yesterday and it worked like a charm. Really delicious fudge; soft and creamy and just sweet enough. Mine was a little softer than I would've liked, so I think I'll let it boil a little longer next time (didn't use a timer while heating it and I don't have a sugar thermometer, so I used the soft-ball technique).

It's possible that either you didn't quite cook the sugar for long enough OR you had some sugar crystals around the top of the pan when you poured it into tray.

No but I tested it for softball stage and it seemed to be about the right texture. I checked it this morning, it is definitely just caramel. I just melted it and made some caramel popcorn lol. I'll definitely try this recipe again though. I want some fudge! lol

It's possible there were a few crystals of sugar knocking around on the side of the pan which precipitated the crystallisation of the fudge.
Hi, Titli! I just tried this recipe and I thiiiiiiink I blew it big time. After I stirred the fudge over the pan filled with cold water, it became really brittle and when I "poured" it into the pan to set overnight, it was all in pieces. Did I boil for too long? I have an electric stove, so could that have had an effect? (I did the chocolate version.) Thanks so much! Love your recipes :)

I made "freestyle fudge" couple of days ago. Toffee (cream, sugar, butter and little bit of honey) cooked till ready. Mixed with dark *cold non-melted* chokolate granulates and let cool down.

@6xxxTheOnlyOnexxx9 I've only ever made fudge using condensed milk. I'm sure that there are other recipes using ordinary milk (in larger quatities and adding more suagr) :-)

It sounds like your sugar wasn't hot enough. Did you do the softball test or do you have a candy thermometer?

All seemed fine until I put the pan in the tray with cold water and started to stir - what came out looked like crumbled soil. lol I obviously messed up somewhere.

Good afternoon. It's the first time in my life I make English food. I like fudge and it is also in Netherlands for sale in stores like supermarkets and candy stores. Yesterday i don't know how you can make fudge self. Because today I had see this recipe from you at youtube. If you're good stirs when you cook the fudge, it's easy to make it. This recipe you put forth was very well explained and what I like about it is the crunchy feeling that I get is with the fudge you have made. Two days ago I made chocolate fudge. I was a little disappointed. I made it with condensed milk, everything went okay with the instructions from you tube but when I took it out of the fridge it started sweating and I had to cut it real fast and put it back in the fridge. I was a little disappointed with the taste because it taste like the chocolate I bought and introduced it into the fudge, I felt I could have eaten the chocolate as it was. Can you please advise me as to what might have gone wrong. The one you demonstrated seems like the one I made when I was growing up without condensed milk and with home made milk cream collected after boiling the milk but that quality is no longer available so I was stuck about making chocolate fudge. I will want to put my hand into the one you demonstrated but please if you can help me out as to why it did not come right and why the end result was sweaty. Thank you very much
You would have to use a lot of milk and sugar to get the same taste and boil off the excess water. It's better to use condensed milk if you can find it.

How long can you resist eating it? A few weeks in an airtight box.
@Photodude413 The important thing is the temperature that you heat the stuff to. Did you do the softball test?
It just takes longer to set. You could add a little bit of cream if you want to.
