This is becoming my favorite cooking channel. It's strange how French food isn't more common in the USA, given the fact that France is America's oldest ally. It mainly exists here in ultra-expensive restaurants most people can't afford. That's why I love how this channel breaks down simple, inexpensive French dishes.

Great point! Although Chef Pepin is classically trained, and a master of that school of cooking, the way he cooks for the world to enjoy is the antithesis of "molecular" gastronomy...and we're thankful for it!!

Gee that is simple enough, one leg and thigh and a small yam and you have dinner for one. I am putting this one on my favorites list, this way I can review make some notes and a shopping list. I have to change my eating habits, this one should get approval from my Doctor. As for your loss, I don't know what to say that I have not already, I lost my only brother back in Feb. So now I am alone, yet I am blessed with a couple of very very good friends. Still working on my omelet skills. Lucky for me I love eggs.

My WIFE will LOVE this dish. I also took the tip about using frozen pearl onions. Flash-frozen fruits and vegetables have gotten tastier and are easily separated. Pearl onions in a vegetable drawer tend to get forgotten at our house.

One of the many things I love about Chef Pepin is, he gives no blanks about his equipment. He stabs pans with the tips of knives, and he just destroyed the heel of that cheapo stamped-steel knife when he cleaved off the tip of that chicken leg. All of the great chefs really use their equipment.
