    Jacques walks us through the recipe for Eggs Jeannette. Eggs Jeannette is an essential recipe for Jacques that his mother used to make for him. Hard cooked eggs, yolks removed and mixed with garlic and parsley, then returned to the whites and sautéed stuffed side down. Finally they’re served with a mustard vinaigrette. A very easy-to-do, delicious, and unusual way to enjoy eggs. Happy cooking!

      I lost my Aunt Jeanie who was a mother to me my entire life 6 months ago after an aggressive 3 month battle of cancer. She had Epitheleoid Angiosarcoma, cancer of the blood vessels. It was horrible. For 3 months I sat by her side. She was a fabulous cook and I wrote so many of her recipes down. I value them more than money. This video brought her to me. I hope to someday get past the terrible feeling of loss and sadness I have. It’s hard to even grasp she gone still. Thanks for sharing your own words and feelings. It just reiterates we’re all the same even though we like to think we’re different. Peace all. 💙

      Thank you for your comment about your Aunt Jeanie. Maybe think about writing your story and thus creating a warm hearted recipe book with her recipes and your memories.
      I would buy that book. And believe many ppl would also.
      Don't just think about it. DO IT!
      In your writing and compiling of her recipes you will end the feelings of loss and build up all your good memories of your lives together. Please do it.💜

    • @colinmcdonald2499
      @colinmcdonald2499 2 ปีที่แล้ว +2

      @@bratticuss I doubt Julia and Jacques ever had an argument about omelets. Jacques was still in Culinary, helping develop modern American cuisine and writing his Bible and teaching too, when Julia was already on TV.
      I am sure there are hours of the two cooking together on her show on You Tube and many hours that are still in archives. I do hope the Smithsonian will preserve all of both of their work. People need to know how they influenced the basic quality of cooking in the States.
      American food was spotty ( awesome in some places and ways and awful in others ) before Julia Child and Jacques Pepin came onto the scene.
      American food was Solid when Julia left and her dear friend Jacques and uncountable immigrants like him and people passionate to learn and experiment, like her, keep helping it get tastier and tastier. With platforms like TH-cam... This is going on in remote places globally as we type. Hopefully those remote places will keep cooking their way and send it back out to the world too!

    I have watched Chef Pepin as he aged and have so enjoyed every stage, learned so much. This video, where he is older moved me to tears. I lost my father a couple of years ago he was about the same age as Jacques is in this video. My father's hands, like Jacques, were age worn but so deft and strong. He learned to cook from his mother as well and when I cooked with him there was a running commentary of memories of her kitchen, his father's garden as well as life lessons about hard work and attention to detail. Tony Pezzullo cooked the simple, delicious southern Italian food he grew up on. One of my last memories was of him cooking his eggplant parmigiana with a splendid marinara. When he finished putting it in the oven, he turned to me and said, "there, my mother's mulignan, she would be proud of me."

    Made this morning, awesome! Note: don't accidentally substitute avocado oil for olive oil in the dressing; it will suck.
