Plus, if you simplified his answer Y + X + 180 - Z = 180, it will be Y + X - Z =0 Y + X = Z

that angle isn't z because they aren't vertical angles, they are supplementary angles, which means both the angles added up is equal to 180 degrees. But since we already know what z is and we know that both of them added together are 180 then we would take 180- z to get that missing angles degree. I think your only confused because of the first portion which is identifying and differentiating vertical and supplementary angles.
