I know there's pro players that do that, and I'm not a pro but watching Yadier Molina (arguably the best) you'll notice he makes a tiny jab step and stays centered of plate. I'm not hating I love your videos.
I've always taught right handed catchers to take a short, quick jab step staying centred to the plate to right handed hitters. You want the land foot to drop behind the plate at the point, but not on it. With left handed hitters, I teach a slight jab step towards the right hand batters box to clear the hitter, otherwise the catcher risks hitting the batter or bat with his throw.

I noticed the same thing. Moving into the batter box with a right handed hitter is a no-no.
