Looks good! I am all for baked bread, meat & cheese!! You could bend the Stromboli a little in the pan to make it fit. People make shapes (wreaths, hearts, etc). Also, maybe foil or something on the bottom to make it easier to get out of the pan.

I hope you will indulge me with a suggestion…you should do a show once a month or so wherein you have someone else cook their specialty…you live in the perfect place retired people love to show younger gens how it’s done. I use pizza sauce as a base on the dough before adding meat and cheese. Using a beaton egg on the top of the Stromboli will brown it up nice. You did a great job. Hope you and your wife enjoyed it.

The Stromboli can be curved to fit the baking sheet. Just slightly like an U. A flat sheet would help or pizza stone even better. Equipment makes a difference! Brushing with a bit of egg (scrambled with teaspoon water) or even olive oil or butter brushed on top will make it beautiful golden brown. You might want to watch Italian grandmas on TH-cam to see technique in action! Good job getting that dough together. I’m making something similar-Spinach sausage, cheese stuffed bread, but using frozen dough to lighten the work load. 😊
Also, try brushing on melted butter with garlic powder before baking. It might give the crust more of a golden brown color. And skip the olive oil inside the stromboli. But, it looked delicious!!

A I assumes you know to cut vent holes in the dough before baking! And parchment paper would have made a world of difference as you rolled out your dough and rolled up your stromboli! And lined your baking pan with parchment too! But surprisingly, the finished product looked great! And the dough you made looked wonderful too! Congratulations! You need iodine in your diet, only obtained by using iodized salt. However, chefs like to use kosher salt for cooking. But you can use iodized as table salt. Don’t keep adding flour as you knead. The gluten won’t have a chance to develop. You knead to develop the gluten (stretchiness.). Great job!

You can put anything in a stromboli, Calzones are a little more picky and Ricatta better be in it. Shorter side would stop the inside from cooking. Prego in Italian is Please. Oil oilve the top and bottom.
If you rolled it up from the short end, it would be too thick and the dough in the middle wouldn't cook. Also, there is no law against bending it into a slight cressant shape to fit in the pan better :)

Unless you are curing meat or fermenting, it doesn't matter what salt you use. Iodized is good for you.
