Nicola Bowden I don’t know if you made these yet or not, and if you did, did you use the cream filling made in this video? My uncle owned a bakery, and he made these everyday. He used meringue or whipped egg whites for the filling. Much easier, and faster.

Here's a comment. Also, I disagree with the method used to make the pastry. While puff pastry isn't hard to make (then again, cook here, so what I consider hard can be... well, up to discussion) it needs a lot of kneading and strong flour. More importantly; the butter mixed into the flour should be melted and the butter used in folding should be cold. To make cold butter a bit more pliable, sandwich it between 2 parchment papers and use a rolling pin to smack it until flat. Amusingly enough; I started making puff pastry yesterday for a dessert and the most important thing I can say about it is; take your time. Don't rush and let the dough rest for at least a couple hours with each folding.

Use butter no margarine. All the "pastry butters" are margarin. Don use those for french pastiserie
