the Berkshire available by me looks like your iberico pork. You must've gotten a lower end version. The marbling on the Berkshire looks like wagyu not like the Berkshire you had there. its a shame you didn't get a good one for the test.

I recently scored some Iberico pork from Campo Grande. They have several Iberico cuts including some lesser known cuts like the abanico (rib cap), coppa (aka mogote, from the upper part of the collar, basically the pork equivalent of chuck eye), 3 different secretos (the classic one from the shoulder, jowl secreto which can be used like guanciale, and belly secreto), even Iberico flank and skirt steaks to name a few. There’s a $150 minimum for building a custom 📦, but their curated boxes are exempt from their $150 minimum.

Berkshire is so much better than regular pork that I don't think it's worth that much more for iberico for a little better. Also, you should have trimmed the double chop down to the same thickness to do a comparison. Even normal cheap pork is way better when being cooked in a thicker piece.

I was born in Berkshire (UK) and I have never heard of Berkshire pork I didn’t know this place made a breed of pig that was this well known, also another weird coincidence I love eating pork l🤣🤣
This is not an equal comparison. Iberico pigs are much older at butcher. Age equals flavor. You would need someone to specially raise a Berkshire to 16+ months.
Hi Justin. Given that these are what people can buy, I think the comparison is valid. I.e. - is the Iberico you can buy worth the price difference vs the Berkshire you can buy. But it's ok if you disagree as long as you watch lots of my videos!!! :-)

All pigs in my zone of spain are free range tho, by law they gotta have 1 Hm2 for each pig (0'004 square miles/pig)
