    Hi Linda.... I really enjoy your canning recipes.. I noticed you bought a Power Cooker Plus. I have one also. I was wondering if you could post more videos of canning with the Power Cooker..     Hi Linda your channel got me into canning: Thank you! On the national canning website there is (to me) unclear info about canning Chile’s can you take habaneros and such for your recipe? Also if i were crazy and added ground beef to your salsa, do you think my wife would throw me out of the house? Do you think it might taste ok? Thank you for any feedback and your awesome channel.

    Looks beautiful! How many tomato plants are in your garden this year, Linda? I've got only 6 romas and am not going to have enough for salsa for awhile. (May just buy some toms so I can make your salsa!) Thank you so much for sharing the food processor method. That beats standing and chopping for hours.

    have two questions, I did not see you take the skins off the tomatoes, and did you chop up the chipolte peppers in the food processor ??

      I do not skin the tomatoes and yes everything went in the food processor

    we been talking about canning salsa for years and cant seem to save up enough to can any . we make a pot that size and its gone before we can sterilize the jars lol

    When straining my stock I got tired of trying to use cheese cloth so now I use one of those filters that came with my coffee pot. It works like a charm and really gets those extra fine yulkies.

    It's beautiful!!! Yum! I just canned my first batch for the year of canned tomatoes! Wish I could leave a pic.... They are beautiful too! I got in my Better Homes and Garden jars and am waiting for my Atlas jars! I'm excited to fill them also!

      well i do can a lot of our food, but when she walks to the camera with that suspended hot jar, i am just waiting!!!!! LOL!!!! she certainly is an inspiration, though, a business woman, a partner to her hubby with their hunting, a self sufficiency pro!!!! the hunting videos i would never let MY husband watch!!! SHE butchers the kill!!!!!! i can see doing a deer, but the moose are waaaay too much; in fact, i want to do neither!!! LOL!!! let's NOT watch that, darling, nothing to learn there! LOL!!!

    I have tatler lids butt would rather use regular ball canning lids and support your channel at the same time.

    Just curious, how long do you let your salsa sit before opening it?

      You can use it right away after it cools

      +Linda's Pantry I left my salsa for a week or so on the shelf and found that it really changed flavour, it's like wine, I guess ;)

    I always use bottled lemon juice but I'm wondering why this is something you made a point if stressing?

      Bottled lemon is guaranteed 5% acidity, so you can be sure your product is safe for water bath canning. You can't tell the acidity level of fresh juice, so it isn't recommended for canning. When I use fresh, though, I just add an appropriate amount citric acid powder to be safe.

    I've read that there is no safe recipe for canning quarts of salsa. Don't know if it is true or not. But several years ago I canned 3-4 qt. of salsa when I ran out of pints. A year later they pushed off the lids. Tossed both salsa, and jars, into the garbage. Maybe I didn't process them long enough, or maybe it really isn't safe to can quarts... Don't know. ... But I now only can pints, and have never seen that problem again, even after 3-4 years on shelf.

      Another question: Have you ever used "Clear Jel" when making tomato salsa? I don't want to use too much paste to make my salsa thick, but maybe unsafe to can. - Thank you for your help.

    Don't you have to pressure can with veggies in it? Straight tomatoes I no can be water bath, but with veggies I thought you had to pressure can????

    gaaaaaack!!!!! just looked up your cuisinart stock pot on amazon.ca; $280 plus !!! canadian dollars!!!!! to your $70 american $ on amazon.com!!!! i will wait til i go to florida and have it delivered to our rental, as i, as a canadian, have a u.s. visa charge card, and a u.s. bank account!!!! i don't care what the gov't says, there's NO justifying that kind of price difference!!! grrrrrrr..........
