    I have to say, I have followed your recipe for the last two times that I've canned my salsa... the only thing I did not do was put Mrs wages salsa mix in. It has came out fantastic each time with your recipe. Thanks so much for sharing! I honestly never thought I could ever do this, but look at me!

    I was searching for videos that would show me that it is OK not to cook your salsa before you can it. I always seemed to me you’re double cooking it prior to canning. I’m happy to see that you are not doing that. You did a wonderful job with your video, and I thank you❤️😋❤️😋

    Just finished mixing up all the ingredients and I'm tasting it. It does taste sweet! Didnt expect the recipe to call for sugar and vinegar!! Made a half recipe even though i blanched all the tomatoes, because I'm not confident in myself yet lol.
    This will be my first time canning anything ever. Gotta figure out what to put in my pot as i dont have a rack. Thank you soo much for this video and recipe and we'll see how it goes!!!!

      I hope it turns out great for you. 😊 You can put a layer of canning rings on the bottom to lift the jars a bit.

    Oh wow, I have been canning salsa for the longest time but was always afraid of adding anything else than tomatoes and when I do the bath I always start with cold water until it boils and then 20 minutes...you just use the boiling water and only 10 minutes...you just made my job even easier...! I'm still in awe! thank you very much for sharing!

    I did this last year following your video. Thank you so much! Our family loved it. I gave away several jars and everyone that tried this loved it. I tweaked it some but mostly stayed with your recipe. I can’t even remember how many jars I ended up making because everyone wanted more and more. Lol. Going to do this again this year …. Even making more.

    This recipe looks awesome...when removing tomato skins...plung them immediately into cold water after the hot water bath and the skins will fall off easily..no burned fingers....

    That is a great recipe Amy, thank-you. Most recipes call for cooking the salsa and adding vinegar or bottled lemon juice. I see though that you have been successfully canning your salsa without any of that.

      The recipe calls for 1/2 cup of vinegar, though I don't believe she mentions it, or the sugar.

      I hope she added lemon juice or vinegar, because that is crucial for keeping the pH down (high acidity) to prevent botulism. Some varieties of tomatoes are acidic enough, but unless you test the pH yourself after mixing everything you can't be 100% sure.
      Outbreaks are rare, but you seriously don't want to play around when it comes to botulism. In most cases, you can't rely on a simple "sniff test" to determine if botulism toxin is present. The infection is far more sinister than other food borne illness like E. Coli or Salmonella-you have a 40-50% chance of death if you don't seek treatment. Even with treatment, you could be on a ventilator for 2-8 weeks. Almost every outbreak results from improperly home-canned foods.

    Reminds me of our house when I was growing up. We'd can all sorts of veggies and fruits. Jelly and jams, once even sausage! Then we got a freezer and started freezing things too. We cut corn off the cob and canned some and froze some. We had corn everywhere! But it sure tasted good! That salsa looked so yummy now I'm hungry! See you next time. God bless 🙏 i

    You should put the chopper in the sink and chop the tomatoes. If it splatters it won't be a big mess on the counter. We also put the tomatoes in cold water in the sink when we take them out of the hot water. It stops them from cooking and the skin falls right off. We make a salsa that needs to be cooked. I may try yours though It looks yummy!

      Well Amy I tried your way and I used Roma tomatoes (since they are a little firmer)…
      and it came out mush instead of nice chunks like yours did!!!😩What the heck am I doing wrong? Did I maybe scald them too long?

      Maybe so. Although I've never used Roma tomatoes to make salsa, I scald them just long enough that the peelings will come off nicely. It doesn't take long at all.

    Love the video and was trying to find one about not cooking salsa. I keep hearing that you have to make sure you have the right acidity and do you heat your jars before you put in the water bath?

    Hi I was just wondering other videos show the salsa being cooked first then put in jars and water bath but you don't is it still safe do that.

      This isn't my video but I am reading the comments and learning like you are. Looks like there is a difference between raw packed canning and cooked packed canning. If the salsa isn't cooked it is raw packed and needs to be in the water bath longer? I hope you find the answers you need MaryLou!

    Amy, I only planted 2 big boy tomato plants, but I am only getting 3-4 ripe at a time. My farm lady neighbor suggested coring and freezing them and when they thaw they’ll peel easy then I could make smaller batches of salsa. What would your suggestion be for making only a half dozen pint jars?

    Hi, just made the recipe this past weekend, it tasted amazing fresh as well, wondering if it's okay, our jars had about an inch of clear liquid at the bottom and the salsa moved up to the top touching the lid in most cases, I also had some liquid leak out into the water bath as it turned orangish red while processing, I processed for 40 min (missed the part about 10), any thoughts, it appears they all sealed?!

    Hi Amy, I’m a little 😟 I did my salsa today, but I used my frozen tomatoes, so the mixture was cold to put in my jars. I did them for ten minutes in the water bath, but feeling a little unsure since they were cold to start out. Do you think they’ll be ok?

    What is the shelf life of the canned jars, if they are unopened, please? Great video, salsa looks so good. I used to work with a lady who added a bit of chopped mango to her salsa to cut the heat taste a bit.
