Making Gruyère in the Swiss Alps for Centuries

- Alexandre Murith’s family has been making gruyère d’alpage in Switzerland for five generations, and there is an art to producing this cheese with a hard texture and no holes. While regular gruyère is made year-round, gruyère d’alpage is only made from May through October. That’s when the cows are allowed to graze freely in the mountains, nibbling on wildflowers. Once the cows are milked, the Murith family’s gruyère d’alpage is made in a traditional manner with no processing, and each wheel is aged for several months. mmmmmmmmm i love gruyere, it's my favorite cheese. smells like feet, but tastes better than any other cheese. but you gotta get it w/ the yellow rind still in it. the cheese right next to the rind is the most fermented, so it's the sharpest and most complex part of the cheese. and the rind is edible too, and extremely flavorful, though i do prefer to toast it if i'm eating the rind. it gets this super nutty savory flavor that's just the best

you can definitely eat it. the only rinds you shouldn't eat are the ones made of wax or cloth. any ones made from bacteria or fungi can be eaten, and some would even say should be eaten. do you cut off the rind on brie too? lots of cheese lovers eat the rind, it has the most concentrate flavor, it's the essence of the flavor of the cheese. it's best when melted or grated though. when the rind is melted, its flavor profile changes dramatically, some of the more volatile stinky feet compounds evaporate quickly, and some of the other complex compounds have chemical reactions with each other to make a very nutty flavor. or if you grate the cheese, the rind pieces are small enough that you don't just get a giant bite of it, and it spreads the flavor out through the cheese.
you're right, it doesn't smell great, but it definitely tastes awesome. and compared to some of the stinky cheeses i've eaten, some of which were stinky all the way through, gruyere rind has a rather mild flavor, comparatively speaking. some stinky cheeses taste like straight up ammonia all the way through, but those are a bit too overpowering, even for me.
God, I love cheese. I don't care if I'm lactose intolerant.

Pretty sure lactose is converted in the cheese making process. Especially hard cheeses have very little lactose.
Aged hard cheese is lactose free.
Gruyere is lactosefree! I'm lactose intolerant and I eat it all the time.
Good to know: Cheese that riped for more than 3 months is, because of the bacterial process, practically lactose-free. I eat cheese that old without an issue. I'm lactose-intolerant myself.
By the way that counts also for camenbert. It's lactose free from the get go.

@@Dover939 If you grow your own food, nice fruits and vegetables, for you and your community, then you are happy. If you grow food to sell and the supermarket that you rely on to buy forces the prices down to make buyers happy, then I guess that isn't good for the farmers mental health.

@@souhung69 Made some family visit the place a couple of years ago and yes, it's way too touristic in a bad way.
Go to Fribourg, visit the old town and have fondue, get some chocolate at the Chocolat Villars shop, go see cows pretty much anywhere else.
This cheese is one of my dad‘s favorites following behind many other cheeses.

While I'm partial to Appenzeller, Tilsit, and Marechal, Gruyere still has a special spot in my gut. The Premier Cru variety's my personal favorite of the Gruyere lot.

Amazing video however there’s a little problem with the translation. « On le mets dans un bain de sel pendant 24 heures » means they put it in a salt bath for 24 hours, not in a cellar for 24 hours.

you really have issues with the traductions in all languages... your french translation made somy goofy choices in translation. for example they do not let the cheese in the cellar after pressing the curdle. they keep it in a bath of salt. at minute 2:11

I just bought gruyère at my Costco
If you have a chance taste the Alpage Gruère against the regular. My cousin in a different part of Switzerland only makes cheese from the cows in the months they can graze high in the alps. It makes all the difference.

They have not trade marked the name, so you have to be sure that it is Swiss and from Gruyère. The French use the word as a random name to put on Emmental (ew). Gruyère tastes amazing and does NOT have holes.
