I use baked tofu squares -- they are well cooked so they have a tougher texture like that of meat. Bean curd is great in soups and recipes that call for meat.
My husband always gets egg drop soup in restaurants. It never look as good as your versions. They usually make it so thick and starchy. Both your versions look amazing.
