    On Keto, I eat and use fried pork rinds for breading. No carbs! I buy many different flavors of pork rinds, so different flavors on my meats. I use peanut and olive oil. Only use butter flavored crisco for my dumplings and biscuits.

    I enjoy that you think about those among us who have not had to ever learn to cook. (That would be me! All cooking is fairly new to me, and I am 71 years old!)

    Leslie, you look amazing! Your hard work and discipline have certainly paid off. I put on 40+ LBS when I stopped nursing. I had to give up one of my favorites-cornbread!!!! It was a pact I made with the Lord. I loved sweets as well; I had to ditch them.

    You provide good recomendations for the things you fix. I love Southern Fried Chicken and I would have never thought that by crunching up pork rinds you could get almost the same effect as flour. Thank you.

    Leslie, I have a quick tip to still get the crunchiness if you don't have time to let them sit! (Or to add even more of that texture)! You can add milk to your flour (just do it a few tablespoons at a time) & rake it around with your fork. It shouldn't be wet but just have small pcs that are straggly. It creates those shaggy little pieces that stick to the chicken! (Think Chick-fil-A tenders or nuggets)

    Awesome. cant wait to make these. no keto ones though. did it for 2 yrs. with my hubby. both had to have emergency gall bladder surgery due to high fat. we are diabetic and it was great for that but had consequences if done too long. going to store for buttermilk. thanks for sharing 😊

    Leslie!!!….I was also got my inspiration from highfalutin’ low carb….(I prefer the whey vs pork rinds) but….I marinate mine first in the skinnishdish’s pickle juice marinade. Oh.My.Goodness!!

    All the years of frying things, I didn't know about letting it rest with the breading on it. Recently, I learned this secret and my word what a difference it makes. It fries up so much crunchier.

    Leslie, I use pork rinds to batter chicken,fish,steak finger,meatloaf,chicken fried steak and vegetable..It give the the crunchy I carve...also you should try it with the hot pork rinds,give you a little spice and lots of flavor...😊

    That's how I remove the white thingy. I also pull that thin skin off. It doesn't dissolve when fried. FYI.

    That looks delicious, I always use a zip lock bag and put my flour or coating mix in it and then put in the chicken and shake it to cover it works well that way you don't have to handle it !!!!

      I was taught to do that; bread the chicken but with a brown paper bag.. We didn't have plastic bags growing up. I remember my great- grandmother standing at the stove placing chicken pieces & flour mixture into a large brown paper bag & shaking it up a storm. Her chicken was always crunchy. 🐔🍗

    I've been avoiding seed/nut/vegetable oils because of the inflammation factor. I use lard, butter, bacon grease, ot beef tallow. (I follow Dr. Ken Berry)

      Yes those seed oils are terrible for us. I save my my bacon grease especially to cook with. Fatback grease would be wonderful to fry those low carb chicken tenders in!! Yum

    A great “potato” sub is roasted radishes! Wash, quarter and air fry or bake as you would new potatoes.

    Those low carb look so good I have to make them! Since I’m not low carb and just making because they look delicious couldnt I use flour? Or would that “poof” the pork rinds off?? Any thoughts?

      your flour will add carbs, but the oat fiber is an option not required

    I appreciate the fact that you’re showing how to cook the stuff with no carbs or very little carbs I am a diabetic and there’s not a lot of things that you can eat out there if you don’t know how to fix them the right way so I appreciate the fact that you show both ways to do this this way if you are a diabetic and you have to be low carbs are no carbs you can at least do that looks like wonderful chicken and I can hardly wait to try it myself. Keep up the good videos.

    Leslie you need to try radishes for a potato substitute. I put them in my roast during the last hour of cooking everyone thinks that it’s baby red potatoes. They don’t taste like radishes they take the f;Avon of whatever you’re cooking. I’m a very picky eater and I love them. Kristy Davis on TH-cam does all kind of things with them. She does Potato salad. Some fry them. Give them a try.

    Leslie - I loved seeing how excited you were when the low carb chicken fingers turned out so delicious! I get the same rush when I'm able to make a delicious low carb and gluten free substitute for one of my fave things to eat (I can't have gluten anymore). I also need to avoid sugar (all my teeth are sweet teeth - ha!) Anyway - thanks so much for this new yummy recipe!
