Hello, dear friends. I had a craving for something sweet today. I wasn't feeling well for most of January, so I kept my sugar intake really low, but I decided today was the day to bring on some yummy treats. I love most of Teagen Gerard from Half Baked Harvests recipes, so I decided to try two new ones today; Strawberry sugar cookies and Peanut Butter Bars. The Peanut butter bars are only sweetened with maple syrup, so it's not bad for you. The sugar cookies are, well, sugar cookies, so there is nothing healthy about them, but my goodness, they were good. I hope you enjoy coming along with me today!

Chelsea, I watched you unbox your Ank mixer. And I quickly started to research and the more I read about and watched videos the more excited I got. And sweet girl, my husband surprisingly gave me one for Valentines Day. I’m not young, 74, and I know I will never wear it out. But I plan on trying to at least break it in. And I have a granddaughter that I know will gladly take this beauty off my hands when the time comes. Lol. OOOOOOHHHHHH!!!! And he got it in red. He told me red for his favorite valentine. I haven’t unpacked it yet because I haven’t decided where her home will be. Thank you so much for sharing yours. I know I will love it.

I use one beater on my hand mixer to mix the peanut butter. Push the beater all the way to the bottom of the jar (very slowly, if the oil is at the top), hold the jar very tightly in one hand, and then turn on the mixer. Mix a bunch at the bottom before moving the beater up higher in the jar. And, yes, this works much better if you've stored it for a while upside down. We buy it by the case, and turn all of the jars upside down as soon as we bring them home.
Just wondering how much oatmeal did you use and what kind? I don’t see the oatmeal on the recipe page.
I use my food processor to make oat flour from rolled oats. Oat flour is rather expensive and not easy to find. Love your channel and many blessings to you and your family.
i had to start making dog treats for my old guy that passed I used rolled oats as well and blended them flour worked great
I do the same. It’s ridiculous what they want for oat flour here where I am.
I found cream cheese flavoring extract on Amazon, got it to try it,,,and it is FANTASTIC!!! An authentic cream cheese flavor when you don’t have any actual,cream cheese!.

I scrape it out of the jar, and mix it with a hand held mixer. Return it back into the jar. Store in the refrigerator. No additional mixing needed.

Morning Chelsea, One little tip on your peanut butter. When you store them in your pantry, store them on the lid and the oil will work it way into the peanut butter. I didn't believe it until we tried it and it works.
It would be so easy to weight the peanut butter instead of smudging the measuring cup! For the dry strawberries, you would look on the chart on the can and you would know the exact weight of strawberries to put in your blender.
Peanut butter is easy to measure if you do this: If you need a cup of peanut butter, put 1 cup of cold water in a 2 cup measuring cup. Spoon in peanut butter until the water line comes up to the 2 cup mark. Pour out the water, and you are left with 1 c. peanut butter.
That's how we learned to measure cold butter in Home Economics class as a teen.
Store your PB in your fridge upside down as soon as you bring it home from the store and that helps with the separation of oil 😊
I use one beater in my hand mixer and use it to mix natural peanut butter and almond butter. Trust me.... you need to have a firm grip on the jar when mixing it. But it is the best way!
Since around 1988 I have had the pleasure of snow skiing in Whistler. On our trip up, we always enjoy a stop at Canadian Tire. This year I purchased a kitchen scale, drink glasses (to match the ones we bought last year, some broke.) and a gas jug that doesn't have all the restriction we have in the US. We had a wonderful vacation this year, the skies were clear so we could see forever. We look forward to it each year.
Mixing the natural PB ,the struggle is real. I use one beater on my hand mixer,hold the jar tight and slowly blend!

For my peanut butter, I take everything out of the jar and put it into a bowl and use my immersion blender to mix it all in. Then I add it to the jar and I use it fast enough that it never really separates again. It means a little bit of cleanup, but it works really well.
I know you just ordered a can opener. But the oxo has one of the best ones I ever used. I’ve literally had mine for about 12 years and it’s still going strong.
For a good hand held can opener try the Ligistino one fron Canadian tire. We have been through all different ones & it is the best!! 😊🇨🇦
Something I've done with natural peanut butter is to empty the entire jar into a large bowl (2 jars at a time if you go through it quickly), and mix it til smooth with an electric hand mixer. Then I put it back into the original jars to store. It is a "task" at the beginning but I find it worth it. It spreads nicely after this. :)
I was gifted a Bosch mixer with all the attachments but there are only 2 of us. I gravitate to my KitchenAid. If the kids were still at home, that Bosch would be perfect.
If I started my seeds this early, I’d be up-potting them 10 times! Lol
I use a hand mixer with just on of the attachments and blend the peanut butter in the container. I store the peanut butter upside down til I open it up and mix it up. The hand mixer works fantastic. Just keep it on a low setting

If you have a hand blender, put just one of the whisk attachments on and use that the blend up the PB right in the jar.
Empty the entire jar into a bowl and use a mixer. Put back in the jar and into the fridge. Works great!
For mixing the peanut butter I use a fork with long tines. Poke a lot of holes up and down into the jar all around, using a twisting motion to loosen what inevitably settles and hardens at the bottom of the jar. Then once I know all the thicker PB is loosened, I start churning it with the fork from the bottom up towards the top. Poking the holes with the fork to start really makes it easier! Hope this helps! :)

To mix natural peanut butter I use an immersion blender directly in the jar & it works great.
Flipping the peanut butter upside down works really well. Just remember to close the lid really tight, or you'll get a complete mess 😅.

Chelsea, I have always made my own peanut butter … organic unsalted peanuts, organic peanut oil, argave syrup or raw honey, or even pure maple syrup depending what’s in the pantry, and a tiny pinch salt. No preservatives, nasties or floating oil .. tastes fabulous and is dirt cheap. That Costco peanut butter with all the oil turned my stomach a bit. You should have a go at making your own - you’ll NEVER go back ! 🤩😍
For the all natural peanut butter an immersion blender does great and then store it in the fridge.
1. Beater on the hand blender. Cover with saran w ap .Blend in jar .

Dump the whole jar into a bowl, mix it, and put it back in the jar. You get a much better result that lasts longer.

Pour the oil into a bowl and scrap out all the peanut butter in same bowl. Using a hand mixer very carefully mix the oil into the peanut butter. When it's all mixed put back into jar. I then keep it in the refrigerator. I have not found the peanut butter to become too stiff to spread keeping it in the refrigerator but it keeps it from separating.
Tipping upside down never worked for me but it takes a little extra time but I fine well worth it to put it all in your blender or food processor. Works great!!! Good luck

I have a hint for mixing the separated natural peanut butter. I use the two dough hooks on my hand mixer. They fit to the bottom of the jar and mixes it wonderfully.
Get a Kitchen Mama can opener. It is a game changer. The battery lasts forever.

I pour out half of the oil on top of the new jar of peanut butter, then mix the top half. Then when the jar gets half empty and the peanut butter is getting hard again I pour back in the saved oil and stir.
When you started the peanut butter bar, it reminded me of a recipe my mom makes. Hers has rice crispy cereal in it, so yes, that would be a fantastic addition. I need to ask her for that recipe along with my other favorites from my childhood.

Peanut Butter / Natural... I have tried mixing it in the jar and usually spill the oil everywhere. So... when I open a new jar, I dump it in the mixer bowl and turn it on low until it's all mixed in. Then it goes back in the jar and into the fridge. Hubs doesn't like it cold, but if ya leave it out, it's going to separate again. And it really doesn't get that hard in the fridge, it's still spreadable :)

I'm so sorry Chelsea didn't know you were not feeling well. Unfortunately you and me both but I know what my problem's are I'm having a bad case with my rheumatoid arthritis. They say stress doesn't help and since I lost my beautiful collie fearnie. Even though my husband has got another puppy she's about nine months old. I still miss my gorgeous collie. But it comes and goes no doubt I will get my self together soon. So if I miss any of your videos I will catch up

Peanut butter: mixes quickly in a stand mixer with paddle attachment. I have to wash the mixer, but it beats the manual mix and cleanup of the oil that slops out of the jar 🤷🏻♀️

I was so sick of dealing with mixing the oil into the peanut butter (or the mess than I had to deal with if anyone else in the household tried to do it 😂), that I started ordering peanuts from Azure so I could make it from scratch, one batch at a time. BUT I also realize that may not be feasible for larger households!

I use that same peanut butter. I empty it all in a bowl, mix it all together, and then dump it back in the jar. I use to mix it directly in the jar, but I'd make a mess!

Use an immersion blender to mix peanut butter
I usually lay my peanut butter on its side then when you go to mix you get all the way to the bottom quicker.
I've gone off sugar since January 1st but it won't be forever... I do feel better though

Storing natural PB upside down does prevent most of the separating. I even store it upside down after I've opened it.

Just an fyi. I planted lemon balm and now it's growing EVERYWHERE! and the main plant, I finally had to dig it out as it was getting huge, it is sooo hard to control.

Chelsea, here is a little advice for digging out peanut butter, I don't measure it anymore, I have a good rubber spatula that I use. One big scoop of peanut butter is about one cup. But do it the way you normally measure out. Also big hugs to your lambs. They are so cute. Love & Hugs from Laurie

On the peanut butter…..I store mine upside down since the bottom gets a bit dried when the oil gets mixed in on top…..
It is so much easier to weigh your peanut butter. Put your bowl on the scale; tare the scale, weigh the peanut butter. 258 grams per cup. Thanks for sharing
