    Thank you for such an informative video! Not sure if you’ll see this but be careful about sharpening your knife over food.. it can let off tiny metal shards which are now in your food. You should also rinse and wipe off your knife blade after sharpening to get rid of all the particles.

    Roll your baggies over (like the cuff of your sleeve) at the top, helps to keep your baggie open and less mess at the seal. Love your videos!

      Thank you! I was very surprised that she didn't. Also, Chelsea, it would have been sooo easy to cut the bacon in half while wrapped, then just pick up the sealed ends and dump it in the cure. Much tidier and nothing on the hands! What fun!

    This was so interesting. Living in Australia we have no idea about these cold temps … indeed over the last couple of days we’ve had 100% humidity …. horrible, hard to breathe heat. I’ve been giving my chickens (my chooks, as we say) frozen watermelon and ice water ! What a diverse world we live in ! ❤

      I was complaining to my brother this morning on the phone how cold it was at night. His reply his question was how cold was it? I said it was 41F. I did not get any sympathy from him since he’s in Minnesota. But my cold comes from the damp of the Pacific Ocean, which is close by and living in a house built in 1906. The damp comes through the walls.

    Thank you for another wonderful video! Two things that help me in the kitchen one I turn the upper lip of the Ziploc bag inside out, it helps it stand up on its own, and that way you don’t get the zipper part dirty you’re putting things into the bag. Also, it’s best not to sharpen a knife over food because the micro shards of metal can get into the food.

    • @carolync4862
      @carolync4862 ปีที่แล้ว +8

      And to wipe the knife off before using it to remove any remaining shards of metal.

    -37 C tonight, -47C (-52 Fahrenheit) both Friday and Saturday night, and -38 Celsius Sunday night and the day temperatures are not that much better. And -10 Celsius by Tuesday. That's Alberta. I bundled up and went to the dentist today and it was actually busy at Costco. I'm hibernating the rest of the weekend. I knew we all had it way too nice and warm all fall and over Christmas. Hopefully this will be the only Deep Freeze for the rest of the winter. But we still need to get through February.

    One difference between the UK and Canada/US is that you "hot smoke" and actually cook your bacon when you smoke it. Our store bought bacon is "cold smoked" and the bacon is still raw, but with a smoky flavour.
    It's probably because we don't have the history of home curing that you have. "Hot smoked" is safer and easier to store without refrigeration.

    *FUN**FACT:*
    The temperature -40°c is the same in Fahrenheit; -40°f!! I don’t think they are the same at any other temp. Every year here in Minnesota we hit those low/mid double negative temperatures a few times. In those temps life goes on as usual except one’s lungs burn when inhaling. I hope everyone is staying dry & warm❣️Cheers, Doc

The chickens were happily eating that warm healthy oatmeal.

    For a mixed benefit, you can turn down the zipper of the bag, inside out. It will wear on the edges of the zipper so you don't get as many reuses, but it will hold open the bag as a second set of hands. Depending on how far down you fold it, it can also help the bag stay upright, acting as a reinforced wall.

    You have trouble keeping hanging baskets alive because you live in a dry climate. In the summer you would have to water them 2-3 times per day.
    Besides the moisture problem in the winter, the ammonia from the manure can kill the chickens as well. The ventilation helps with that.

    I really enjoyed the tour of your farm and seeing how well you care for the animals. I also learned a lot about how to cure bacon. I don’t know how you find the time to do all you do and film it. I’m going to stop procrastinating now and edit some video. :)
