It's kind of like my friend group (myself included) and the entire school: "Sure, we'll pick fights with each other all the time but those five over there? They're insane, and they're obsessed with Skyrim, our two least favorite things. Avoid them at all costs." Us: "Hey! Hey guys! Hey! We found this cookie on the ground! It's probably only been stepped on a few times! Wanna share? :D"

The reason Sheogorath gets wins the bets is due to his knowledge he obtained as Jygallag, the Daedric Prince of Order. Jygallag had a systematic knowledge about the Daedra and mortals. Which led him to be able to predict their behavior and actions, and also make him believe free will was an illusion (Which some of the Daedra share in that belief). Sheogorath is insane, but that doesn't hinder his prior knowledge. In fact it gives him a bigger edge, since the Daedra as shown tend to underestimate him.

Azura made a wager with sheogorath that one of her dunmer followers could worship her for one century on an isolated island without contact with anyone without going insane. The problem is that Sheogorath basically cheats around the terms of the wager and puts a bunch of daedra on the island that you have to go kill as her quest in morrowind.

***** That is the lore explanation for any possible inconsistence between games. It's an interesting idea and a smart solution.
The problem isn't that they change, the problem is that the changes don't fit the characters.
Sanguine isn't know as a fighter, he is know as a depraved who enjoy pleasures and excesses. Since he appear as a physical presence in the game you would expect an custom model that fit the character, like Sheogorath and Nocturnal, instead we got an dremora surrounded by duplicated npcs.
Peryite annoy me because they put ghostly rats to indicate the drug causes hallucinations and therefor he is communicating with you trough the hallucinations. So why wouldn't he appear in the illusion? Imagine how threatening that voice would be if it was coming from a ill looking four legged skinny dragon approaching you from behind that tree.
