This is one of my favourite solitaires, and you've done a good job of explaining it. I'll add a few things for the sake of completeness:
When dealing in this particular game, it's quicker and easier to fan the cards off the top of the deck four at a time than to deal each card individually.
If you instead deal five cards each to ten piles and take the first two aces that emerge during the deal as your first two foundations, you get the game Good Measure. It's much tougher to win. Baker's Dozen is reasonably fair; most deals can be solved with decent skill.
If you want an easier game than Baker's Dozen, try Spanish Patience. Deal as you would for Baker's Dozen but build the aces up to kings regardless of suit. If you're new to games of this variety, pick this one.
Castles in Spain is another related and good game. Deal as in Baker's Dozen but don't move kings to the bottoms of their piles. During play, pack the tableau down in alternating colour and build the aces up in suit. To compensate for the added difficulty of manipulating the tableau, you can restart any empty pile with any available card.
Of these four games, Baker's Dozen and Castles in Spain are my favourites. Both are reasonably fair without being too easy. But do try the other games if you're so inclined.

According to Wikipedia: "Two kings that are mixed into one column are placed on the bottom without changing their order."

Can cards of the same color be put (in numerical sequence) in a single stack?

Yes. You're allowed to pack cards in the tableau regardless of suit so long as they're in descending sequence.

Solitaire isn't the name of a specific game but a category for all single player card games. The game you're thinking of is probably Klondike, which is the "standard" solitaire most people in the English speaking world know of.
