I bought a King Cat last Spring for $1000... spent many weeks and dollars getting it ready to ride. It's not in anywhere near the condition as your RMK, but it's almost ready to go. Just waiting for snow. There is NOTHING wrong with the older sleds. Anything from early 2000's onward is vastly more capable than the OLD stuff. 144 or longer track and you're golden. I just realized I saw your other video about this sled a while back... only now finding this one.
Before messing with jetting, make sure your float bowls are moving free and the needle valve is seating as it should. Not uncommon for the old sleds to have contaminated fuel systems
Luckily with those light weight trailers, you could park off the side unload the sleds, unhook the trailer and just spin the empty trailer right around. Then turn the truck around without having to deal with the trailer and re connect
Never mess with the carbs jst clean them I’ve never even messed with the top of my carbs in 02 800 xcsp and also the screws are on the side and stock settings are 1-1/2
The full throttle bog sounded more ignition related ... either overheating or detonating if the CDI has DET on it. The CDI will cut the ignition in either case.
U could tell right off the point that ur belt was slipping 😅 might of not even had to mess with the carbs but u are in the mountains so I guess u can raise the needle
I still remember when those edge chassis were new. In fact I've still got my 2000 yamaha mountain max, I bought new, although it never gets used, with my Axys Rmk, and modded M7 spare sled. At the time it's 141, and the Skidoo summit 151, we're the longest tracks available. If you wanna go old, but still almost as capable as the modern sleds, find a clean 2005-06 M7, or any M series up to 2011. Until the polaris pro in 2012, the M series was the best mountain chassis out, and a good rider, with a track upgrade, to a 2.6 or 3 inch power claw, can follow anywhere the new sleds got, you just work a little harder.

Run some readline fuel system cleaner, before breaking out the wrenches, it's usually gummed up carb, from bad fuel.

they make a mic that will hook to the go pro. Muskoka Freerider has one, makes it great to talk when riding.
