I love your lasagne recipe, which is like my American recipe. The reason I say this is I live in England and instead of using a filling of ricotta cheese or cottage cheese filling, they use something called bechamel sauce ( white sauce ). Add different cheeses to the sauce, then layer the lasagne using bechamel sauce, mozzarella and Parmesan cheese, along with the bolognaise sauce and noodles. I make both styles of lasagne, and my family usually tell me which style of lasagne they want ( American or English ) lol! I’m glad you add sugar to your sauce, I do the same thing for exactly the same reason. Good idea freezing leftovers! I use lasagne noodles in the chiller section as opposed to the type you have to boil. Makes my life a whole lot better. I have also tried lasagne noodles that you don’t have to cook, but the noodles still come out not cooked, so don’t bother with that type, since it doesn’t do what it promises.
My hubby is from italy and we eat "macaroni" ....italians don't call it "pasta". And they dont call the sauce "sauce" they call it "gravy." My lasagne isn't that great so I will try yours because everything you make is great. We've been married 48 years & I cook & bake for him & me everyday (twice a day). He just retired and now I have a pot washer! Karen, try a wedge of real parmesan or better yet Romano and grate it yourself so it's fresh. So true even if she buys shredded or shaved Parmesean Parmigiano it would be so much better then the bottle of the dried bottle stuff it' just doesn't have a good taste even getting the store mixed Italian brand.cheese is better.then that bottle stuff

I also use tomato paste in a tube.. It just makes sense. This looks so good and I’d love to have some carbs.. Right now my husband and I are eating nearly no carbs… When we lose 20 pounds then we’ll have a cheat meal with a really good dessert, like a hot fudge brownie. Just limit ourselves to know more than 3-4 squares of brownies 😂. Great to see you my friend. Always enjoy no matter what you’re cooking. Love ya much.. ❤I always add butter to my noodles while they’re cooking. Helps them not stick together.
We're cooking dinner for our church in a couple of weeks on Wednesday prayer night and I plan on making lasagna! We make ours pretty much the same!! It will be for about 40 of us!! Yours looked so good!

SIMMER FOR ONE HOUR, WHY?! Here is why: You want a well-set lasagna rather than a sloppy fall-apart lasagna. The consistency of the meat mixture matters. Simmer to reduce the liquid and how you test this is: when you slide your utensil through the meat sauce, it should hold its shape, not runny/saucey/liquidy. Also, when the lasagna is finished cooking, remove from the oven and allow it to firm-up or set by letting it rest/cool for 30 minutes; then, you can cut and serve. I prefer cottage cheese, it has a milder taste; ricotta cheese has a texture that can be gritty/grainy and it has stronger taste. I haven't pre-cooked lasagna noodles in years and I never use the no bake kind. Just be sure the noodles are covered with sauce and bake. It always comes out great and always gets compliments from whoever eats it. Just as good as noodles cooked ahead and far less work and clean up. Give it a try, I think you'll agree. Just make sure the noodles are covered with sauce.

Lasagna is one of my favorites; yours looks delicious! I do wish you shredded cheese yourself because it tastes so much better, but I also get it that some just don’t like shredding 😊 I was eyeing those cookies in the background 🙄
I always have pre-shredded at the ready. It's just so convenient. I agree though, much better when you shred it yourself. The cookies are chocolate chip and a video will be out in a few days. 🧡

You dressed it up. I use the same cheeses you do but have a few other additions and a different technique. I love how you made yours, I wanted to take a bite out of it when you held it up ha ha. However, my niece and her husband visited me from Canada in the fall, and brought a large casserole of it and we had it one night then Cheryl put up the rest in freezer meals for me. I do this also.
You can freeze parmesan rinds and chuck them in while the sauce is cooking. Makes a real difference. Also bay leaves are good x

I completely agree..as well, I would prefer fresh garlic, rather than that stuff in the glass jar.
I always use Romano and grate myself. I cut the rind off and throw in my gravy. Sooo good. I also grate my own mozzarella. Yum!

@tiachandler5350 true. I buy shaved and grated parmesan all the time and love using it. However, if the green top is all you have, then use it.

Always tap the bottom of the jar, upside down, it releases the vacuum seal......👍😁

Sometimes, instead of ground beef, I use sweet Italian sausage for something different, but I like it either way.

Cottage chews actually works best. Ricotta cheese can be grainy. I learned these from Cooks Country.
My mom always used cottage chews. I think it has more flavor than ricotta in addition to the fact that ricotta can be grainy, as you said.

You can use regular lasagna noodles without boiling them . They will cook fine in the oven with the sauce and all. It’s yummy either way!

That looks delicious but I do prefer cottage cheese over ricotta. My mom always made it with cottage cheese. You’re a great cook!
Question: what do you do with leftover oil that you fry things in if it’s more than a couple cups?
I pour into old oil bottle and throw away.

I am Italian and we add eggs to our ricotta. You can soak your noodles in hot water no need to boil which breaks them often.

Good evening Karen and Hubby....my oh my that does look delicious. I haven't made lasagna in years. Living by myself, it just isn't something I fix. However, my niece and her husband visited me from Canada in the fall, and brought a large casserole of it and we had it one night then Cheryl put up the rest in freezer meals for me. I have made it and frozen in individual portions. When I want it, I take out what I need. No waste if all is not eaten. 🧡
