- Learn how to make Caribbean stewed pork ribs in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com Using the classic way of brown-stewing, we'll marinate pork ribs with a traditional Caribbean marinade, then we'll caramelize some brown sugar before adding the seasoned ribs. Finally we'll braise the ribs until they are tender, packed with rich Caribbean flavors and simply delightful to eat. With a lovely hint of ginger, a slight kick of heat from the pepper and gentle undertones of herbs from the Caribbean Green seasoning, this will surely become your favorite pork ribs recipe.
For the stewed ribs recipe you'll need..
3-4 lbs pork ribs
3/4 teaspoon salt
1 tablespoon Caribbean Green Seasoning
1 tablespoon ketchup
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
3 slices ginger
1 medium onion
1 medium tomato
2 birds eye pepper (bird pepper)
1 tablespoon veg oil
1 1/2 tablespoon golden brown sugar
2.5 - 3 cups water

So, I tried your recipe for the first time, and I hit some road bumps along the way. But in the end, you were right. The rib meat falls off of the bone, the flavor is fantastic, and the only thing I wish is that it looked more like yours. I never comment on TH-cam videos, but bravo sir, and thank you. Hopefully I get it right next time! Lol

MMmmmmmm that looks so good! I know all about what you mean about budgets and getting what's on sale. I really do like pork ribs. I have a short story for you, Chris. I really like pork ribs. Usually I get spare ribs. Every time I see them on sale at the grocery store I get two racks. Normally this is a good idea and not a problem.. until it is. One time I saw pork spare ribs on sale, so I got 2 racks (the limit the store put on the sale). I got home, got ready to put them away, and I couldn't. The refrigerator freezer was full and my big freezer outside was full. Of pork spare ribs.It was at that moment I realized I had a problem. I'm a horader, Chris. I hoard pork ribs. Haha!

Hello Chris can you tell me how long can you keep green seasoning, my husband tell me it doesn't go bad.
I make a big batch and flattened out thin in ziplock bags and then store in the freezer. I break off a piece when needed.
I usually keep mine for 4 to 6 weeks.

rice, potato, ground provisions.. even a side of salad, quinoa.. treat it as a main meat and you're set. I had it with rice and sometimes we do garlic mashed potatoes

Chris, when I stew...the sugar becomes hard waaay before it ever gets frothy like home. I live in the US right now. Can it be the sugar I'm using or something in the technique?

at what heat do you have the pot/stove on? And I've had more success with golden brown sugar

mid-high heat and doesn't seem to melt, only smokes and gets hard. I was using raw brown sugar.
Just use regular white or brown sugar on medium heat around gasmark 6. For some reason hard raw sugar crystals does not melt properly.

Ketchup is a substitute for tomato or vice versa. It gives acidity and depth of flavor. Makes a big difference imo
