    Recipe:
    3 pounds chopped or shredded zucchini
    3 cups juice of choice
    1 1/2 cups sugar
    3/4 cup lemon or lime juice
    Simmer all ingredients in saucepan for 20 mins
    Fill jars and hot water bath can 15 min for pints

    Crushed pineapple was literally non existent in my area during the lockdowns last winter, and still hard to find now. My crew LOVES carrot cake, so I am definitely going to try this as a substitute for real crushed pineapple. Thanks Heidi, for posting this.

    I might use a melon baller for cherry, I would like apple cider flavor, and with lots of zucchini I would try making apple butter with the zucchini.

    I made cranberry zucchini I didn't have enough pure cranberry juice but had a jar of cranberry sauce opened in the fridge and used it for the rest of the juice. since I use brown sugar and cinammon in my cranberry sauce i used brown sugar and cinnamon in the zucchini.May try make cranberry zucchini bread.     I made a batch of cherry juice zucchini (with a little lemon juice and sugar) They turned out amazing. They have the taste and texture of canned peaches somehow. Thanks for sharing this

    I do this with Armenian Cucumber and dehydrate the pieces after cooking. The cranberry juice ones were so good. I added grated ginger in a batch with the pineapple juice. Tastes just like dried fruit.

    Hmmm...Cranberry juice would be interesting. "Cranberry" sauce, "Cranberries" for stuffing the turkey @ Thanksgiving and Christmas. Mandarin Oranges! Do you think you can use the juice left over from mandarin oranges? Great video Heidi!

      I was thinking the same thing on the cranberry juice as well. I am sure you can try. Like I suggested in the video, maybe just try making a small amount, say a half cup total , to see how you like it before making up a large amount

    So interesting! I wonder how t would work with rehydrating dehydrated zucchini in pineapple juice. Wouldn't have the watered down issue. I have dehydrated, so might try that. Thanks!

      That would likely turn out even better as the dehydrated zucchini would soak up more of the flavor as I have done with dried apples and cooking them in cherry or apple juice and that gives them far more flavor and are wonderful in pies. Now I do think I will go ahead and dry up more zucchini, I was trying to decide if I wanted to do that.

    Now I have to try this with tart cherry juice to make a sour cherry pie filling substitute. Cherry season is so short around me and I’ve missed it 2 years in a row and I’m really missing tart cherries.

    Don't have excess zucchini this year not a good crop this year for us. Black cherry happens to be one of my favorite flavors so I was looking forward to this a lot. Thank you for figuring out the acid levels I was concerned about that. Those fried pies look luscious.

    I made this exact recipe yesterday (full recipe, so double yours) and got 8 pints of pineapple zucchini. Not sure what I'm going to do with them: I did the cubed one. It does taste just like pineapple.

    I would make a pineapple upside down cake with the pineapple zucchini and use the cherry zucchini as like maraschino cherries on pineapple cake. Cobblers would be good too

    Im currently freeze drying foods for extended vacations in the RV where weight and fridge space matter.
    Thinking of soaking the zucchini in salt water so it will lose moisture, then stir frying. Then freeze dry, and use pineapple juice/sugar to rehydrate.
    Just thinking of ways to avoid the freeze dryer taking so long.
    But , you've given me so many ideas for all the zucchini my neighbor keeps secretly leaving on my porch in the middle of the night. Lol
    That's ok, melon season is coming and I know who's gonna be sick of finding melons on his doorstep every morning. Lol
    I guess there are worse problems to have than nice neighbors.

    Sounds like this would make good ice cream topping. I wonder if it would be good to mix pineapple and orange juice . I like drinking pineapple/orange juice. Will have to give it a try.I also like eating pineapples in cottage cheese. This sounds like it would be more nutritional . Thanks for sharing. Watch all your videos and love them all. I have made the creamsicles and love them and am working on getting the fabric together to make me a couple of skirts.

      Oooh...good question! I can see cooking the peels zucchinin apple juice (additions for flavor will vary by taste) and then blending once fully cooked.

    Have you ever thought of, after being weighed, bag and freeze it. This way you can expel some of the juice that the zucchini gives off....or does it matter? I'm going to try it both ways!

      I have never used it as such but yes, you would need to add flour or some other thickener as you would any pie filling you would make

    As I think about this I'm wondering if the juice from the store-bought canned fruit I have to use for daycare would work. It's all 100% juice that I strain off every can I open. I struggle to find uses for it because there is so much. Do you think that this would work for the zucchini? It's peach, pear & pineapple.

      I am sure it would. If there is added sugar, you may not need to add any or at least cut back. You should be able to tell by the flavor as you are working with it

      You can recycle cans. One person I know made drainage from downsprout to pull water away from house. He dod use #10cans. God bless.

      The texture, though not exactly like pineapple, is quite similar as long as you peel it first.

      Italian striped zucchini. I ended up with that one by accident but have grown it before years ago. Somehow the last pack of black beauty seeds I ordered ended up with at least one striped zucchini seed, Which I am totally fine with! I will be saving seeds from at least one of those and see how it does next year.

      Nothing else was added other than what I have shown. I do not recommend using a thickener when canning it. That is something that should be added when going to use it for making pies and such

    My grandmother made a mock apple pie using zucchini. You couldn't tell the difference.

    I wanna do the pineapple squash but I would prefer doing it in quarts since so many in my family love pineapple what would be waterbath times for quarts?

      Generally speaking, quart jars are typically 15 minutes longer than pints

    Hand pies can be baked, just like a regular pie. Fried pies are tasty but too many calories and fat. Can't wait to make zucchini pineapple bread with tour recipe. Thank you.

      Yes, I know that and have baked them before too but either way it is a rare treat so if one wants to fry in a healthy fat like oil, there is nothing wrong with that and some people are actually wanting or needing to add more healthy fats as well

    I was thinking it might be good to dehydrate the zucchini a bit first. Not all the way but enough to reduce the water a bit.

      It is really not necessary, especially since you are cooking it for a bit before canning, some of the water will cook out but it is an idea to consider.

      I can only assume you are referring to the part where I mention the piña colada creamsicles and that is easy, simply leave it out.

      Non processed pineapple is very high in Bromelaine, a powerful enzyme. It's basically trying to digest you while you digest it. I get horrible chemical burns on my hands whenever I cut up fresh pineapple. I think heating breaks down the enzyme, so canned pineapple is less harsh.

      I personally do not but have heard of it. Easy enough to look up online though. I am sure it is pretty similar to regular apple but would assume one may need more thickener added to make up for the excess moisture from the zucchini...not unless they cook the zucchini a bit first and then drain off the excess

      I use apple juice and add some cinnamon to taste. Make apple cobblers. Of course when canning don’t forget to add the lemon juice. It’s delicious. Strain off the juice before putting in cobbler. The left over juice is good to drink too. I don’t see why you couldn’t add some cornstarch to the mixture to thicken up and make an apple pie right before baking.

    Bye pineapple in the summer freeze it or dying pineapple is great .there is always canned , this just doesn’t cut it .

      The point in this recipe is to help people find ways to use up what they already have in abundance. Some poeple really like the pineapple zucchini and if it is a way they can save money and also use up their abundance, it is an excellent idea. Me, Yes, I would prefer real pineapple to this but still, to each their own. And yes, I have found pineapple for a great deal and frozen it for future use.
