- Today, we have a rich, creamy blue cheese sauce perfect for steak. Start by sautéing minced onion or shallots in butter for added sweetness. Simmer heavy cream until it thickens slightly, then melt in crumbled blue cheese for a smooth, tangy blend. Add Worcestershire sauce, and season with salt and pepper to taste. Despite its bold aroma, often compared to "sweaty socks," the sauce delivers a luxurious flavour that enhances the juiciness and savouriness of your steak with every bite.

I had a neighbor who was a blue cheese fanatic. When she moved away I gave her a farewell dinner where I managed to incorporate blue cheese into every course. It was one of my culinary triumphs 😂!

Took me a long time as a child to manage 5o get last the smell and the strong taste of blue cheese….not any more. Yummmmmm. Next time we get a ribeye, this sauce will be on the supper menu with it!

Yum ... Blue Cheese is a personal favourite, the more blue veined the better. My youngest brother had an Artisan Cheese making business for several years. Lots of cheese was available for our kitchen use including his Blue Cheese which was firm and well inoculated.

Love a mild blue cheese sauce on a steak. I had an oven roasted vegetarian steak ( cauliflower) with a garlic , parmesan cheese sauce last night for dinner it was yummy. Next time I’m going to try it with your blue cheese sauce. Keep on cooking mate 👍

I love blue cheese. Always have, even when I was a kid. I know there's good blue cheese to be had in your part of the world, but if you ever have a chance to try Maytag blue cheese from Iowa, USA, don't pass it up.

Nice job Rik. I use a very similar technique when doing a Parmesan cream for pasta dishes or ...... The main difference is that I reduce my heavy cream first and remove my cream from the heat when I add my Parmigiano Reggiano. That way I never have to worry about it breaking. Once incorporated I can add a little heat if needed and more cream to thin it a bit if desired. It isn't really a big issue with Parm as you know, but it can be with some other softer cheeses that can't stand up to much heat. I'm sure you have made creams that way before, but for the newbies in the kitchen it is an almost fool proof way to make a great cheese cream.

Yuuuuum 😋! I love a blue cheese sauce on steak and gnocchi but have never been able to get it right. I always made a white sauce and added blue cheese instead of cheddar - no wonder it was never right 🙄.

(393) This type of sauce is FANTASTIC on vegetables that get sweeter after you roast them, like carrots or pumpkin or kumara (sweet potatoes). And any roasted fruits as well.

Blue cheese is one of those things where the scent and the flavor don't quite align. The scent can be off-putting but the flavor is rich and complex and so much more than you'd think just by catching a whiff. And, the subsequent bites are always better. It's kind of like cabbage-fry some up and the house reeks of sewer but the cabbage itself is sweet and delicious. So give cheese a chance...

I used to 'hate' blue cheese (of course never trying it - just the smell) until I had a Gorgonzola sauce on a steak at a restaurant. Then couldn't get enough gorgonzola and finally understood the wonderfulness of blue cheese!

My favorite dish using a similar blue cheese sauce is tortellini in gorgonzola cream sauce. It's cheese tortellini in the sauce, baked with toasted buttered seasoned breadcrumbs over the top.

Wonderful sauce! I love blue cheese. I use a little less than shown here for my cheese sauce for pasta, e.g. "Penne" as a wonderful flavor enhancer. As a base I use 2-3 hard cheeses, e.g. cheddar, pecorino. Otherwise as shown here. I add a glass of sherry to the sauce. 👍👍

Btw..was that gorgeous steak cooked in the air fryer oven, the grill, or in a pan? I picked out an 11" round cast iron grill pan (with ridges) that will fit in my air fryer oven... and pre-heating that in the oven should give me great grill marks. Shirley in NH

I'm the person that could put blue cheese sauce on everything. Shallots are an abomination that should have gone the way of the mammoth, just use an onion or leek, they are 10 times cheaper and don't taste like a$$ :) I have never had this particular version. I'm reckoning gorgonzola or stilton would also work here. Thanks Rik.

We love Blue Cheese salad dressing (I like to dip fried chicken fingers in it... or cherry tomatoes). But then I love Velveeta too. lol The thing is... as with most of your recipes... this too is "make it your way". Ya don't like Blue Cheese.. then make it with Feta (tons of Feta lover's out there and they even put that on their watermelon!?)... which I find totally weird. Thing is... put whatever cheese in the sauce that you want. don't want it on steak?... have it on veggies, on a pasta casserole, chicken, etc etc etc. It's just a cream sauce... flavor it the way you want and then have it on whatever you want (bet this would be good with sauteed mushrooms in it too!).
