Because in +ve half cycle only the diode is in reverse bias condition. And zener voltage is only related to diode in reverse bias. So here we have drawn the Vz line in +ve half cycle part.
I think. at 2:56 (when Vin > Vz) the polarity of the dc volage source ( pink coloured) should nee in opposite direction. Please check it for sure.

Hello sir,i have i one doubt...why o/p voltage is equal to 0.7v (in case of zener diode) when i/p potential is greater then zener potential (0.7)
till 0.7 V, the diode was OFF. so all the current went to Vo. after diode was ON. the Vo become zero.
