- Can We Clone The Doctor? Episode #1 This is going to be tough… There are (as the bottle says) 23 flavours in Dr Pepper; but what are they? The internet is full of theories, and lists; some of them make sense and some of them don’t. I have to admit - most of the lists contain ‘flavours’ that are compound flavours like ‘cola’ and ‘Root Beer’ so I don’t know how much I trust them.
There is also a formula book that surfaced from the Old Corner Drugstore in Waco Texas where Dr Pepper was invented. It contains a formula for ‘Dr Peppers Pepsin Bitters’ - but the handwriting is is scribbled that no-one can agree what it says.
Here is our first on-camera attempt:
Ingredients:
1L (4 cups) water
175g dried prunes
130g raspberries
2 vanilla beans, split
15g dry wintergreen leaves
8g whole cloves
2g peppercorns
20g chopped ginger
2.5g ground nutmeg
2g (around 10 pods) cardamom
6g cinnamon stick
4 juniper berries
3g cut and sifted wild cherry bark
3g liquorice bark
3g sarsaparilla
2g cut and sifted gentian root
800g sugar
10g citric acid
15 mL molasses
30 mL pure almond extract
10 mL cherry extract
5 mL lemon extract
5 mL orange extract
2 mL star anise extract
Method:
In a saucepan, combine the water, fruit, spices, and herbs.
Bring to a boil and then remove from the heat and add the cherry bark, liquorice bark, sarsaparilla, and gentian root.
Let steep for 30 to 45 minutes.
Strain out the solid ingredients and return the water to the saucepan.
Add the sugar, citric acid and molasses and heat until dissolved.
Remove the syrup from the heat.
Stir in the extracts.
45mL of syrup mixed into 350 mL of soda water is a great place to start - you can adjust based on your tastes.

That’s why soda is one of the most unhealthy things you can put in your body. The amount of sugar in soda is insane and is why fatty liver disease, once a condition found almost exclusively in alcoholics, is on the rise in children who primarily drink soda.

Mixing Pepsi with Amaretto comes pretty close to Dr.Pepper... but with alcohol.

I've actually found Coca Cola and Amaretto to be a closer match to Dr. Pepper than using Pepsi.
Jaegermeister + dr pepper tastes/smells like Old Spice.
Rumplemintz and Yuengling is really close too!

The primary flavor compounds in Dr. Pepper are from Cherry and Cinnamon. Ditch the Raspberries and Prunes for a mix of Morello and Rainier cherries. Then replace the licorice root with Kola nut. Swap the citrus extracts for zest.
Mr. Pibb, which is ostensibly trying to be a clone of Dr. Pepper, says on the can "Spicy Cherry Soda". So I was surprised not to see cherries either.

It has a flavour of a mildly bitter cherry. (if that makes sense) or may be it's a hint of spice from cinnamon not sure. it's so saddle ... I just love it.
The cherries that I remember from my childhood grandmothers garden had a pretty similar flavour,they were darker in colour than normal ones
Point being... that the main ingredient ,when trying to replicate Dr. Peppers flavour, should be the cherries .
@@korana6308 i dont personally understand this. i almost exclusively drink dr pepper when im going for a soda, i dont taste any cherry in it whatsoever. BUT, there is a cherry dr pepper, which is a different bottle, different flavor, and that does have a cherry flavor.

That would make sense, I was watching one of those "how it's made" shows and while they didn't specifically say what goes into Dr. Pepper, the guy they had on there said it's supposed to taste like black cherry.

Years ago I remember somebody telling me at a luncheon, that their grandad use to work at Dr Pepper and made the syrup mix for Dr Pepper. He said that his grandad told him that Dr Pepper does not contain any prune juice whatsoever. All he would reveal to me was that it was a unique type of cherry extract. This extract is what gave Dr Pepper the prune taste, but without the prunes. Also he stated, the reason why no body has been able to copy the taste is because the amounts have to be exact otherwise any deviation will cause the product to taste nothing like Dr. Pepper. Many off brands now have totally given up on making Dr. Pepper using real ingredients and have opted to use artificial flavoring to get the product to taste similar to it. This of course being a shortcut and not a good one at that. In the end it gives the drink a weird aftertaste. Of course I have no idea of the validity of this man's statement but you can take it for what its worth. I just always found it interesting. Anyway the smell of a old time soda fountain shop, was the taste profile of the drink. It was basically taking a smell and making it drinkable.

Wonder what's so unique about it? Like, is it some kind of mutant cherry grown in a restricted lab deep within the bowels of the Coca-Cola company, or does it only grow on some island that nobody knows about because Coke purposefully keeps it off all the maps?
@@OmicronX-1999there is plenty of fruit varieties that are bit uncommon, and almost never used commercially. Commercially used fruits are out of fev common varieties, majority of varieties see litle commercial cultivation. Using any of them would make your product 'unique'.

I have a lifelong addiction to Dr. Pepper (I'm literally drinking one right now), and like most Americans, broke as hell during college. Dr. Thunder is pretty close, but I drank so many during finals my sophomore year that I got sick (which doesn't happen with the real thing, btw) and now even the smell of it turns my stomach.
That said, I'd like to start drinking Dr. Pepper because some of their business practices are problematic so I'll be following this closely. :)

Hi Glen, I’m an herbalist and used to work in a compounding pharmacy. You’re definitely on the right track! I used to make digestive bitters and we would add the phosphate and cherry extract to make it taste better.

If you go back to Helgen, there's actually a few bottles of Mead with Juniper Berries in the second story of one of the houses.
A lot of these started out as cough medicine, I'm surprised people don't try stuff like aniseed or horehound... I get a very horehound flavor from dr. Pepper and prune.

it's amazing how theyre so good with carbonation but when you drink them flat, the cough syrup essence comes right out
In high school I gave a Dr. Pepper to an exchange student from Finland. He took a sip and said that it tastes more like Dr. Medicine. He drank it all anyway. I’ve heard that if you grow up without trying it, soft drinks like Coke and Dr. Pepper are strange to an adult palette. I still don’t understand why anyone would drink Moxie. It was like drinking a fizzy Jaegermeister without any alcohol. I did try some of the strange drinks at the Coca-Cola World tasting room, like Beverly soda from Italy. Very bitter, but I kind of liked it after the initial shock of bitter faded.

If I drink Dr. Pepper at room temperature, I can taste an artificial cherry flavor. The cherry flavor that you get from cherry flavored slushies.

It was supposedly a mixture of all the syrup flavors that they had so it might be worth while researching the most common flavors in drugstores at that time.

You're one of the few TH-camrs, were I instantly hit "thumbs up", because I know you aren't playing games and deliver the content you promised.
Something to consider....the Dr. Pepper with the pure cane sugar sold here in the states tastes different than the Dr. Pepper using corn syrup. Green cans vs red cans.
I've only ever seen the red can variety.
Aaron Kaase the red cans sold here in the midwest USA contain high fructose corn syrup. The green cans with the small Dr. Pepper logo in red contain 100% pure cane sugar. It is available year round. I believe the green cans are considered Kosher. Same price for either variety. I find the green cans to be too sweet.

Growing up in Maine, I love Moxie. That is such a specific and recognizable flavor, one that I can only describe as the cough syrup of colas. Drinking Moxie brings me right home. Can't wait for that video.
Bought a bottle at Knoebel's Amusement Park in PA. Definitely the cough syrup of colas. That being said, I have a Ted Williams Moxie metal sign on my wall...
Yeah Moxie stands alone in the soda world. My high school Geometry teacher went to college in upstate NY and near the last day of school he brought a couple bottles in for the truly brave of us to try. He warned us it tasted like cough syrup and that's pretty much how I always remembered it...awful! Fast forward like 25 years and I'm vacationing in Vermont not long ago and there it is in the local convenience store. I drank it down and really liked it this time...not that much different than birch or root beers, only with a slight medicinal quality. Actually quite refreshing. Time changes everything!

That's an interesting point about the almond and cherry extracts being so similar in taste. My Mom had made cookies with almond extract once, and I asked if they were cherry flavored, haha.
I'm old enough to remember when Dr Pepper was only available in the US. Being my favourite soft drink, when I was younger I used to look forward to having it either on the plane to Florida for a holiday, if we were flying on an US airline or getting one from the vending machines at the car rental places. I'm sure many people also remember that soda cans used to be much bigger in the US than in Canada and that it was probably only in the early '90's that they increased the size of Canadian cans.
The standard Australian can is 375 ml. I was disappointed with an imported can as I was expecting to take an extra mouthful or so. 330ml vs 375ml can size.
We got 12 oz & 16 oz cans

I like almonds, but I can't stand almond flavoured things like marzipan. For years anytime I've tasted something that was labelled as 'cherry flavoured', it's always tasted strongly of almond (not the nut itself), and hence I don't like it. I'm usually told that I'm insane for thinking they taste alike.
Used to have a recipe for a nice almond cherry cookie. They play well with eachother forsure.

In my early drinking years, I was introduced to a drink called a Dr. Pepper. It was a mug of beer with a shot glass of Amaretto sunk to the bottom. It's ment to be drunk in one go. When you burp afterwards, it tastes like Dr. Pepper.
I'm not sure what you should do with this info but there it is.
We used to add a layer of 151 rum to that amaretto, light it on fire and called them Flaming Dr. Pepper.

I'm curious as to the 'method to your madness' in choosing ingredients. It looks (to the uninitiated) that you're just throwing a ton of stuff together and hoping for the best.
You are working off a base recipe that you modified. I'd love to know the rationale for your choices given the exotic nature of your ingredients.

I looked at all the lists of what people think is in it, and a couple 'hack' recipes - tried them, and then started making changes to get to this point. It really is a crapshoot, with lots of mistakes, before you get on the right track.

The ingredients I found the most interesting were the "fruits" like raspberry and cherry. I also don't drink it often, but I am a fan of Dr Pepper. When you were making it, I guess I was thinking that I didn't associate Dr Pepper with the fruity flavors. Can't wait to see how you tweak it. Thanks.
It has a really strange flavour profile, it’s going to be a tough one to crack.
Just a couple of observations of my own: When I smell the actual drink, I detect a floral note like rose.
Also, you have to remember that Dr Pepper originated in a small Texas city around the year 1885. So I don't see how the drink could contain any fruit or fruit juice since these are perishable and would likely not always be available throughout the year in that era.
They would be available as syrup though. Not fresh of course.

Looking forward to the Moxie video. But the flavour of Moxie now - at least according to my tastebuds - is a lot sweeter/mellower than it used to be. When I first tried it 30 years ago, it tasted quite a lot like Italian chinotto - bitter and astringent. Moxie fans tell me it had already been toned down before that.
I think that Pibb Xtra is basically chocolate cherry flavor. I have thought that for years. I also love almond extract, and tried to make home made soda out of it, and that's how I figured out that it's in the right direction for Dr. P/Pibb.

Let me save you some time, here is the recipe:
Step one: Half ounce of cherrie juice
Step two: 1 cup of carbonated water
Step three: Black food coloring
Step four: 15 bottles of cough syrup
not even close, the flavor of cough syrup (anise) is present but is so understated i've never seen anyone actually guess that
You certainly have a point about the similarity of almond and cherry flavouring. I tried making cherry ice cream once using preserved cherries in maraschino syrup: It was essentially soft pink marzipan ice cream. No hint of cherry about it at all. Fortunately I like marzipan, so I ate it anyway, but it wasn't quite what I expected it to be.

It's so true about the color. I bought a Strawberry Quik one time that had no coloring in it, and I couldn't get past the white strawberry milk. Very weird.

When I was young (about a hundred years ago!) my mom would serve us hot Dr. Pepper with a slice of lemon on cold days - It was really good and really tasted different from cold Dr. Pepper. It might be interesting to try a comparison of the drinks heated up - might give you some clues as to the makeup.
@Mary Grace nah I could see it. Dr pepper has a calming flavor that could lend well drinken hot. All hypothetical of course, it could be disgusting.

In England I drank Dr. Pepper when it first came here. To me, it tasted like old fashioned Cherryade. Loved it.
We’re they at the same temperature when you tasted them? I always feel like colder soda has a little less flavor.
When I was young, I loved Dr Pepper, I can't bare the stuff now.

Adding a big bunch of cloves surprised me. I've imagined that Dr. Pepper had a flavor of dried cranberries in it, and/or raisins. Or dried cranberries plus dried cherries.
