I don’t really know why but I have always preferred this to Phở, I guess it’s my love for punching but balanced flavors: the sweetness, the tangy lime juice/ vinegar and the saltiness of fish sauce

I also heat up the dressing to dissolve the sugar, but I also find it takes the funky edge off of the fish sauce. Some other recipes I’ve made tell you to just heat the sugar and water and then add the other ingredients room temp and the fish sauce ends up overpowering everything. Same thing when I make bun bo hue - I find putting the shrimp paste early gives it time to all marry together.
I made it today, very delicious, but I adjusted the sugar part a bit. It's just perfect with fresh raw Southeast Asian herbs and vegetables. This recipe also tastes very similar to the one I had in Hanoi.

The Northen style uses a lot of fish sauce as the sauce is very light, less salty, less sweet. The Saigon style uses less fish sauce as the sauce is saltier and sweetier 😊
Yes rice vermicelli. Vermicelli refers to the shape of the noodles which is round and is slightly smaller than spaghetti. Vermicelli can be made with rice flour or starches like mung bean.

Hi! In Vietnam, we add some chopped lemongrass or lemondgrass juice in the marinade. It makes more flavor Your dish looks delicious! Love that!

I live in Hanoi, one of my staple go-to dishes. Cheap and satisfying.

Next to burger, noodles is not the pretty one to eat, but that been said. It is wondelful and delish to eat.
Would it be acceptable for me to mince a few Thai chilies, in the marinade? I like spicy food, but I am afraid it might overwhelm the dish.

We just went 4 weeks to Vietnam and the Bun Cha is a little different there, specially in Saigon, I noticed.
I guess there are 2 versions the salad like the video and a soupy version. I had the soupy version in Hanoi.
