It's not that important whether it's cucumber, daikon, papaya, carrot etc. Any of these would be fine. Not so important whether it's beef, pork, chicken etc.
Very nice video, but for me it’s not authentic bún chả without the smokiness from the coals or wood that the meat is cooked on. The smokiness permeates the broth that it sits in and fragrances the entire dish.
