I can add that the K1 is fine for a terrier sized dog. The two person model is fine, but there is room in the K1 for a small dog riding just fine above one's legs. Its nice to provide a towel to keep claws from scratching the vinyl, and for comfort.
The doggie life jacket is made by Coleman - link to the product is in the description of the video. Our dogs are both great swimmers, but just like us, they wear life jackets when we kayak or paddleboard. If they fall in, it's extra security in case they get swept away by the current. With Heidi, it's also very helpful to fish her out of the water, since there is a little handle on the top :)

We used to travel with our 3 dogs and a cat when we wrote our book "Keep your Paws on the Road" :) She loved traveling in the RV! Never took her on the kayak though.
Id say the intex explorer is good for cruising/touring and stuff and the intex challenger is good for racing and stuff because it goes really fast but I don't like that the fronts and the backs of the challenger are kind of bent down but a good kayak for sporting stuff from what I saw

Do you have to be cautious about their claws or are they quite resistant?
We have not had any issues with the dog claws, I do use a yoga mat in the bottom, it makes the floor more even.

On Amazon it says the Challenger K2 only supports 220 lbs. which would seem to make it unusable for two adults.
I wonder if they mislabeled it - 220lbs sounds like the specs for the K1
