Hi Jazzie - I have a recipe for flaxseed wraps here: nutritionrefined.com/flaxseed-wraps/ As far as this recipe goes, I'm not sure. Psyllium is a stronger binder than flaxseeds though, so the ratio of ingredients would most likely be different.
It is whole psyllium husk (NOT powdered psyllium). Powdered psyllium works too, but you will get slightly different results (more intense psyllium flavor and darker color).
You can use any oil you like. You might be able to get away with using no oil, but I haven't tried it. The worse that can happen is that the flatbread won't be as pliable and moist (without the oil).

Yes, psyllium seek husk is the whole psyllium. I use psyllium husk from Pomme Naturals (which, unfortunately, is only sold in my local health food store). However, a lot of people have had success with NOW psyllium (nutritionrefined.com/psyllium-husk). Some brands definitely do turn purple, but apparently this brand doesn't. Although I have to say that for some reason, I had the brand I use (from Pomme Naturals) turn purple on me once. So, maybe it depends on the batch of psyllium you get ...

I made the almond version and it sticks to the parchment paper and I tried to flip it with the parchment to the pan and it sticks and crumbled, unfortunately it failed with me :(

Unfortunately, there is no replacement for psyllium. You absolutely need it to make the recipe work.
What about Xanthan gum? Also could you put in yeast for a more bread taste?
