What happens if I have the sentence “I woke up early and had breakfast” I don’t know if had breakfast is a dependent clause, because it wouldn’t be ‘inside’ the independent one

its a simple sentence because it has only one independent clause. IF you wrote "I woke up early and I had breakfast" then that would be a compound sentence since you have two independent clauses. The trick is if you can slash the sentence in half and there would be two separate sentences then you have more than one independent clause
