The BEST Rhubarb and Ginger Jam

  • Rhubarb and ginger jam is really easy to make and is perfect on toast. this makes one large jar and 3 very small ones. This video (mainly the end product) was requested by my mum as this is her favourite jam. So this one is for you mum :)
    If you don't like ginger you follow the same process but leave out the ginger.

    Ingredients
    450g/1lb rhubarb
    450g/1lb sugar (I used granulated)
    1 tsp ground ginger OR 2-3 tablespoons of preserved or crystallized ginger that has been finely diced
    1 tbsp lemon juice (do not add if using sugar with added pectin)
    Method
    1) Clean the rhubarb and cut off any impurities (make sure you weigh this after and replace so you have the correct amount).
    Cut the rhubarb into roughly 1.5cm pieces (half an inch).
    2) Add rhubarb to a mixing bowl with the sugar and lemon and mix really well. if using ginger you should add this now. Let it stand for about 2 hours.
    3) Add the contents of the mixing bowl into a preserving pan or large saucepan. Place on a medium-low heat to dissolve the sugar.
    Once the sugar has dissolved bring the mixture up to the boil and heat until it has reached setting point (watch video to find out).
    4) Add to the warm jars. Place a waxed paper disk (wax facing down) and/or plastic disk to seal it. Screw on the tightly and wipe down the sides .
    5) EAT and ENJOY.

    Perfect video! I was wondering when in the process the liquid was added but letting the moisture in the rhubarb seep out instead makes sense. Thanks 🙏

    hi just started my own jam business i use lids which have pop up seel should i use wax discs toohave fast turn around after production done loads jam etc no complaints great vids by the way

    I have never seen the wax paper or plastic put on before the lid. My parents and grandparents used to pour warm paraffin wax on top to seal it . Learn something everyday thank you I will take your suggestion ..Cheers from Alberta Canada

      Oh you can’t beat getting home grown/picked produce especially when it’s for free! You should give this jam a go then 👍 I really like make mini rhubarb tarts too and you could add ginger to those for extra flavour 😁

      LostInMySpace I find those parts to be dry, soft and slightly stringy. I’m just being fussy and as I was making this for my mum I wanted everything to be top notch 👍😁

      @@misselz2272 i APPRECIATE THE RESPONSE. We grew rhubarb for years as a plant was left by previous homeowner. My wife sometimes would harvest it and give the stalks to someone she knew. We gave them to a new person and they gave us a jar of rhubarb jam yesterday made with only sugar and lemon. It was delicious! Now we're going to start making our own, and will make a batch with ginger, per your recipe.

      So lucky it is growing in your garden 😁 I had lots of rhubarb plants where I used to live (very lucky). I have since moved and don’t have a garden anymore 🙁 Can always buy some but nothing beats growing and picking your own!

    How much fresh root ginger do I use

      2/3 tablespoons finely diced preserved or crystallised ginger. Hope this helps!
