      Your way is my favourite way! Compote over French vanilla ice cream. If you wanted to jazz it up, would you add a liquor or anything else?

      Oh, and I like to place those big toxic leaves on the weeds in my garden with mulch over top.

    I remember going into the rhubarb garden with a dish of sugar, pulling it & then dipping it in the sugar. Sooooo good.

    The leaves are not “a little toxic.” They are very toxic. I know some children who made lemonade with rhubarb and its leaves, and ended up with damaged kidneys. It nearly killed them.

    I love to make jam with strawberry and rhubarb and then eat the jam with ice cream, pancakes, pies, etc.

    A great idea if your rhubarb lacks the red color. Add a pack of strawberry or raspberry Jello pack, dry. It'll brighten, add extra flavors without over powering, and give it an even better jam like consistency.

      Canada, the North American country, is known for its long, frigid winters. High energy foods are a must when living in such a demanding climate. Rhubarb compote, though not for the masses, might just make it on the list.

    Well now that i have made my first batch too watery, how do i get it to thicken back up? Im making Rhubarb and Strawberry jam..Im using smuckers strawberry jam to add to the Rhubarb, not sure that will thicken it

      Just keep simmering the rhubarb! It will thicken eventually. It's mostly water so just give it time.

      Yes you just keep simmering at very low heat - its called “reducing”. Basic cooking skill !
