- Swedish Meatballs | Crowd Pleaser!

Ingredients:
Meatballs
• 80g fresh breadcrumbs
• 3 tbsp milk
• 220g lean pork mince
• 220g lean beef mince
• 1 egg, beaten
• ½ tsp nutmeg
• Salt
• Freshly ground black pepper
• Low calorie oil spray
Sauce
• 40g butter
• 3 tbsp plain flour
• 500ml beef stock
• 1-2 tsp Dijon mustard
• 1-2 tbsp Worcestershire sauce
• 4 tbsp light cream
To serve:
• 200g tenderstem broccoli
• 600g potato, peeled and diced
• 4 tsp light butter
• Fresh parsley
Method:
1. Steam or boil potatoes for 20-25 minutes until cooked through. Mash with butter and season to taste.
2. In the meantime, mix fresh breadcrumbs with milk and leave to soak for 2 minutes.
3. Add pork mince, beef mince, egg, nutmeg, salt and pepper to the breadcrumbs and mix well.
4. Using a tablespoon or ice cream scoop, spoon a small amount into your hand and roll into evenly sized meatballs.
5. Heat a large frying pan with a generous amount of low calorie oil spray.
6. Brown meatballs all over until nearly cooked, in batches if necessary, then remove from the pan and set aside.
7. To the same pan add butter until melted then flour and stir.
8. Pour half of the beef stock into the pan and bring to a simmer to thicken, whisking continuously to remove any lumps. Add the remaining stock and repeat.
9. Once simmering add the mustard and Worcestershire sauce to taste, stir through.
10. Stir through cream then add meatballs and simmer on a low heat for 6-8 minutes until the meatballs are cooked and the sauce has thickened, stirring regularly.
11. Top tip - Add a little water at this stage if needed.
12. Steam tenderstem broccoli for 7-8 minutes, season to taste.
13. Top mashed potatoes with meatballs, sauce and some finely chopped parsley and serve alongside broccoli.
14. Box up and store in the fridge for 3 days for an easy food prep.
