    One of my favorites but i do like mine with parmessan or romano. My grandmother used to put anchovies in the oil, they completely fall apart & u don't even know they're in there. 🍝🍤

      Absolutely, you can buy anchovy paste in a tube, use what you need, refrigerate the rest.

      Joseph1NJ Then that becomes the ravishing pasta puttanesca! It's aglio e olio with anchovies and parmesan. Just add black olives and capers and it's the perfect puttanesca 👌

      Oh yes, I sure would know before I even put it in my mouth... just the smell would tell me... I am a vegetarian, so it definitely makes a huge difference!

    Brings back memories from my uncle Vito, in the old country. I went back to meet all the families, the Rigatonis, the Zitis, the Bucatinis, and we talked business. In the end, I made them an offer they couldn't refuse.

    Great recipe! Apart from the taste what's so wonderful about Aglio e Olio is how simple it is. I ordered it once in a restaurant and the waiter said "You don't want that. It's just oil and garlic." He acted like I was insulting the chef! I ordered it anyway. Easy and soo good!

    i love spaghetti with garlic and oil in all versions, so I had myself version of spaghetti aglio olio on my channel - very easy and super fast.

    You do not need fresh pepper or fresh parsley. I use crushed red pepper flakes and dried parsley flakes from the supermarket spice aisle.

    Joe, pepe e sale non ci vanno nell'olio ....mentre il prezzemolo va anche messo nella padella a cuocere insieme all'aglio e peperoncino. ....per il resto sei il migliore cuoco non italiano che abbia visto su TH-cam. ..complimenti

      ​@@biggreenbananas8929 I'm about 50/50 when I make aglio e olio as to whether I want to top it off with cheese or not. Sometimes I do, sometimes I don't. When I do, some fresh pecorino romano grated on top and it makes this incredibly simple recipe even more amazing. Not a lot...just a light dash on top once plated. Too much and you can mask the flavors this dish is meant to bring out. These days I find myself cooking cacio e pepe(I add a little bit of fresh garlic to this as well, my tastes come before tradition) more than garlic & oil pasta but every time I watch these videos, I get a real craving to go make pasta. Easy, fast, simple ingredients, it's the perfect midnight meal.

      What ever brand catches you eye Barilla works fine. You might like to try bucatini sketti it goes really well with this sauce.

      yup, I pronounce it like an American saying it. I know. my Italian immigrant mom says the same thing. Oh well. My Italian is always an American speaking Italian. Best I can do. Great now my mom will see this and I am in trouble again. lol Ciao Joe

      Mispronouncing Italian words in particular ways is practically a calling card of Italian-American-ness. I've heard "aylya olio" before, and "abeets" for pizza, and "preshoot" for proscioutto. Heck, my 100% Italian grandmother mispronounced the name of the country as "itly" her whole life. This dude talks for ten seconds and you can tell he's got olive oil in his veins.
