I was looking at videos about the efficacy of the Squirrelinator trap when I came across this recipe video. I must confess my first reaction was "whaaaaat!!!!". But , as I continued watching, it made perfect sense to me. We in North America have narrowed down the definition of food, especially meat, to the point where we don't see anything that isn't beef, pork, lamb or poultry - purchased from a supermarket - as legitimate for the table. We are former city folk who now live in a rural area with herds of deer, armies of chipmunks, squirrels, game birds, you name it. Yet there is a surprising amount of poverty and reliance on social programmes in our county because no one here (including us, to be fair) seems to have thought of simply harvesting the available abundance. Sure, there are a few hunters here and there who venture out during hunting season to bag the odd deer or duck, if they're lucky. But then it's back to the supermarket to buy pre-killed and packaged protein that's pumped full of anti-biotics, growth hormones and heaven knows what else. I have a very destructive squirrel problem both in my food garden and in my extensive flower beds. You've given me food for thought (bad pun unintentional)!

I notice you always say that squirrel is organic but I would say in most cases that isn't true. In urban areas the squirrels surely forage and eat human scraps that aren't organic. In rural areas most all crops that squirrels would eat aren't organic. As such, most wild game can't truly be considered organic.
We don't eat city squirrels. We only eat squirrels that live in the woods. Also after you skin the squirrel and make the cut to remove the entrails, examine the entrails for wigglers....these are parasites, throw the squirrel away.

can you eat the organs like the heart or liver? Also are the eyes edible. I cook it similar to how you did only I used a deep fryer.
