Finally made this the other week, and it was actually mind-blowingly delicious. Earned a sub and a fan easily. We'll be re-making them tonight and I foresee it entering the regular rotation. Keep them coming, and I look forward to the eventual cook-book where it ends up. 😉

Also, I used to love cottage cheese but I guess there is no way to replicate the texture exactly for now but your version seems decently satisfying - good job!
I used to make cottage cheese from silken tofu. Simply by mashing it with a fork. Texture-wise was very good but I wasn't able to get to the right taste (just added some salt, lemon juice and nutritional yeast). I wonder if you considered this approach and what would be your take on it.
Thank you, yeah I've tried it but the mouthfeel was always off to me. Cottage cheese has a distinct curd and cream aspect to it that tofu on its own with some flavorings just doesn't have. I always felt like soft tofu smashed up reminded me more of ricotta than cottage cheese
I do something similar to your cottage cheese! Do you get in the US the oatly greek yoghurt? You should try it, hands down thickest, creamiest & most versatile vegan yoghurt. A bit funky tasting so I even use it at times with some salt as cream cheese.
this whole thing is beyond impressive! i could see myself actually making the bbq. :) and i really love that you used tofu in your vegan cheez. the only issue is that i never could even get myself to choke down more than a quarter teaspoon of cottage cheese in my whole life--the weirdly chunky texture and the taste both throw me, but i love love love ricotta, which everyone tries to tell me is the same thing (narrator: it's not). would you please tweak the texture and flavors to turn this recipe into a vegan ricotta that (as your cottage cheez did) actually has protein? many MANY thanks! :)
As a southerner all I can say is we grew up different. Never would I ever imagine putting "cottage cheese" on a BBQ sandwich or as an accompaniment. Very intriguing recipe Sauce Stache!

Could you make the carrot beef with thawed out tofu? I'm guessing that probably wouldn't work with the cottage cheese replacer, so next time I score some super firm (it can be hard to find) tofu, I won't freeze it.

Hand shredding is neither easy painful or that time consuming! But if you want to use a machine totally go for it! I like to do things by hand and cleaning a single grater is easier than a whole food processor for me

Thank you so much!!! Im still stuck at like 10-15 pounds away from what I consider my final goal healthy weight... its been a long stretch of being stuck here, just trying to work a little harder and push a little harder while also being forgiving of myself. Losing weight is really tough
ain't no way someone is gonna think shredded carrots taste like beef. I mean they can visually get close but once it's in your mouth it'll come down to the taste and texture, and a shredded root vegetable is not even close to animal meat. like sure it can still be a good meal and healthy but it isn't even a mile close to a substitute since carrots are high in sugar. its probably been so long since you ate meat that you've convinced yourself its a close substitute.
Sorry there is a way and ive done it before with people. If it was simply a shredded root vegetable like you said then sure I agree with you that there "ain't no way" but there is some technique that goes into this recipe that changes the texture and taste. Just like hormel beef chili for years used about 60% soy protein as their beef chunks and no one knew any different and thought it was just ground beef in those cans. Maybe try things before you judge them...
You made shredded carrots not beef don't care how much you try to doctor it up it's not gonna taste like beef an no on is going to mistake it far meat it they do they don't have taste buds

Simpler tofu drying: grate first then nuke it to sizzling. Water will separate out; drain with light squeeze. Will then absorb marinade better.

You know we are in 2023, there are machine that shred for you very quickly! Cooking should not be painful and time consuming in my opinion!
