A tip for making gnocchi is to actually avoid kneading the dough, and handle it minimally to avoid gluten-formation. You just bring it together, *barely* past the "shaggy dough" stage before rolling it out into sausages, and that keeps them super soft. Such a great idea to use canned potatoes; way more weeknight-friendly!

I always have potatoes in my pantry. I like to steam a bunch in my instant pot. I chill what I don't use for that dinner. This would be a good use for some of those. (For those who don't want to run out and get a can of potatoes, when you already have some in your pantry.) I like to cook 4-8 portion dishes. It's just me and my teen. I prep the rest for work lunches or leftovers. I have everything you have except the sage. Pretty easy to switch up the herbs to what's on hand. ☺️ I I usually have russet and sweet potatoes on hand. Sometimes red or yellow. Depends on what's on sale or available.
I've seen people use sweet potato to make a sweet or savory gnocchi dish. Haven't tried yet.

My dad used to often invite coworkers to come over our house after work for dinner. Unfortunately he always failed to give mom a heads up, so it was an ambush.
Canned potatoes was one of her secret weapons that she kept on hand so she could try to stretch a meal to feed one or two more people.
And I think that's why my siblings and I love canned potatoes -- it remind us of fun dinners with the interesting people my dad would bring home.
