Apricot & Coconut Loaf | Baking in a Wood Fire Cook Stove

- Very easy to make, this simple recipe is a favourite in our family: a moist, dense loaf, perfect for the school or work lunchbox. Was a recurring feature in Zak's childhood, with Penelope [Granny] making this often on the tiny coal range they had when he was a boy. This sweet loaf tastes great served plain by itself, or with a little bit of butter.
Ingredients:
1 ½ cup white flour
¾ cup wholemeal flour
2 heaped tsp baking powder
2 cup desiccated coconut [long thread coconut is best]
1 cup raw sugar
1 heaped cup diced dry apricots [can soak these in the milk for an hour or more to rehydrate]
2 cup milk
Mix all the dry ingredients and then add the milk. Put into a well greased loaf tin and bake in a moderate oven, for about an hour (approximately 55 minutes at 180 C/350 F). Easiest to slice once cool!
Extra notes:
🌏 NZ baking measurement conversions: edmondscooking...
🌳 Healthier variations: try halving the quantity of sugar, or substituting with honey or maple syrup; adding bran, nuts or sultanas/dates/raisins; and/or increasing the wholemeal to white flour ratio.
🍪 Less healthy variant: add a cup of chocolate chips! [Gretel thinks this is a great idea 😂]

My heart is so happy watching these clearly well-loved children have such a good quality of life. Though the adults could probably get the bread dough stirred faster and more thoroughly, the little ones are all given a turn and everybody is given an apricot to eat rather than candy and the children are going to see the chickens rather than the arcade and my heart just melts watching them be beautiful and well-loved children. There is something bright in their eyes that i feel sometimes gets snuffed out of people too early and i am so glad it is still there with them. :)

Oh William you're such a real sweetheart...love it that they have their cousins around them...what a big happy family! When I was young, I lived with my grandparents and most of the times, my cousins visited us and we were so loud running around, fighting and all the children stuff kids do....So adorable for their cousin Maeve to request for a home stay home😆...she is so polite and i do hope she gets to visit her cousins most of the time...i like her being talkative😄

Gosh, I remember playing ''Go Home, Stay Home''... summer hols... uncle and aunty's... Grey Lynn, Auckland... early 60's... neighbourhood kids... played till dark, then mothers would call to come in for dinner; whereupon, I had to wash my hands, wet my hair and comb it before sitting up at the table. Just sharing some fabulous memories.
Lovely! Some of my best memories of childhood are those times playing endless games of "Go Home, Stay Home" with siblings and cousins too, and love seeing the next generation keep it alive! 🔥

This is lovely. My children are all grown now but I remember back to when they were young and helped me in the kitchen. All 4 of them are amazing cooks and bakers now. Thank you so much for your wonderful videos.
Oh loved the recipe! Reminds me of my childhood when we would drive our Granny nuts in the vacations asking her ' What's there to eat' almost every hour after a round of playing hide and seek on the barn. By the end of the day she'd be tired and say 'Now fry and eat me'. She'd actually look relieved when mom and dad returned home. Yah grandparents they'll do anything for the grandkids. God bless.

Memories of my childhood right there... Definitely the happiest of my life my mother and granny all loved baking... And granny had an old range that she cooked on evenwhen she had a brand new cooker.. Everything tasted better in there.... Just watched it with my mother , she almost cried remembering her childhood back when she was in the south of saudis arabia ( southern lifestyle is almost the same as yours years ago) . Green lands and yards , the smell of the grass and yummy homemade foods is just warm epic life we all missing those days.
