  • Apparently to qualify to be actual champagne the drink has to be made from grapes from a specific region of France and thus has a controlled price making it the perceived drink of the wealthy.
    Well that's all changed, since now any wine can be turned into a champagne-esque bubbly extravaganza with nothing more than a common Sodastream drinks carbonator.
    The Sodastream works by injecting carbon dioxide into a drink through a diffuser, and as the pressure in the bottle increases, more carbon dioxide gets absorbed into the liquid.
    The Sodastream units are designed to be used with water, and then have flavour syrups added afterwards. But in this case we are carbonating white wine. It's worth noting that red wine seems to go a bit nuclear when carbonated, so probably best approached with extreme caution. I think the high tannin content probably acts as nucleation surfaces and makes it less stable when carbonated.

    Now try starting with just white grape juice, adding ethanol and then doing this to see just how low we can go.

      The grape juice with ethanol is a LOT sweeter than real wine because in the fermentation the grape sugar is converted to alcohol.

      bigclivedotcom If someone were willing to, for some reason put a lot of effort into it, they could add about 60% by volume of alcohol to it. Sugar would start falling out of suspension, because it is less soluble in alcohol and could then be filtered out.If it is possible to distill it without burning the remaining sugars, you could then reduce alcohol to normal, wine levels. It sounds like a real pain in the ass, but I am curious how it would taste.

      One of the best alcohol boosted drinks I've tried so far is simply Ocean Spray cranberry juice with some base spirit (vodka/rum/moonshine) added. The tart taste of the cranberry and bite of the ethanol is very close to red wine, but much more predictable.

      I believe vodka and cranberry juice is actually a thing. I've certainly done it in the past, probably copying something I saw in a bar somewhere.

    I like it! I've long used my Sodastream machine to revive cider that's gone flat, despite the maker's admonition to "carbonate water only". Re the possible mess - if you leave the bottle in the machine for 5 to 10 minutes after giving 10 to 15 short blasts of CO2 and then release the pressure SLOWLY you should find that you don't get the foaming pool of liquid under the machine. I've not tried wine but will do now! Thanks Clive.

      +Danny Potts In the UK a Sodastream costs around £60. A bottle of champagne costs upwards of £30 and a bottle of white wine costs £5. Payback within three bottles of fake champers.

      I bought a bottle of real Champagne in Lidl the other day (or was it Aldi?) for £3.99. Well, it says Champagne on it anyway.

      Asda and Tesco regularly have Champagne for £10 a bottle, but I'm not really a Champagne drinker so haven't tried it. Thought the £3.99 Lidl stuff was worth a punt though!

    Interesting. If you're going to the bother of faking it like this I would recommend chilling the wine as much as possible first. Then decant into PET bottles and keep cold. I have a feeling the bead (bubble size) will be more authentic after a bit of ageing, even just five hours would make a difference.
    Use the dryest of dry white wines. If it is too dry for your plebian tastes then elderflower cordial is a great way to add a little sweetness and aroma, just add a couple of drops into the bottom of the glass (or jam jar) as you fill it. This can also make cheap white cider drinkable. A mixture of home-carbonated bone dry white wine and the naffest blue 3 litre PET bottle supermarket own-brand West Country rocket fuel would probably work quite well and would be a cheaper way to get nicely drunk at about 9% ABV. A good wine for sipping, slurping or especially for lying down and perhaps vomiting.

    Apart from the regional nomenclature, the distinguishing feature of champagne is that (like cava) it's made fizzy by post-bottling fermentation. I think what you've got there is more of a prosecco.

    What you need to do is add some baking yeast to some white grape juice and let that run for a day or so, then cold crash this in the fridge to clear it. (May take a day or two.)
    Pre-chill your 14% ABV wine before carbonating to help prevent an overflow then add the clear yeasty grape juice in proportions that reduce the ABV to 11-12%. This will give your "champagne" its distinctively yeasty note.
    You could just by cava instead though. It's superior in every way and much better value ;-)

      I think my brother tried carbonating whisky. The problem is that you have to do quite a lot and I'm not sure how well it holds the carbonation.
      CO2 also adds a slight bitterness to drinks.

    I should dig mine out and fizz up some vodka.
    Friend of mine a few years back in Vegas actually soda streamed a bottle of his own piss.. Don't ask me why he did it or for what purpose or what he did with it, the mention of it at the time was enough to gross me out and I did not care to hear the rest of the story..
    Actually I do know what happened and the purpose. He used it to spray on people on the strip..

    +bigclivedotcom If you enjoy fizzy wines, have a try of Portuguese Vinho Verde (litteraly translates to green wine). "Casal Garcia" or "Gatao" are internationally available. The co2 inside that variety of wine is traditionally naturally produced as a product of the fermentation and not artifically added.

    Champagne gets all its fizz (bubbles) from the impurities in the glass, so if the glass were 100% perfect & 100% sterile there would be no bubbles at all. so next time you're at a nice fancy event & a waiter brings you a nice fizzing glass of champagne... tell them to go wash the glass properly ;)

      Nitrogen wouldn't stay dissolved in the drink, soon as you uncoupled it from the pressure it would escape quickly as bubbles. CO2 is more soluble in water.

      We actually got the thing in the mid-90s (replaced an 80s model that, funnily enough, had it's glass bottles go missing!), so, it's at least 20 years old in design, though the CO2, well, that's anyone's guess... :P

    That older soda stream is better than the current ones they are selling as the newer ones are assembled so cheaply now and are even more annoying to use. Id use the old one but i cant get refills or find a way to refill the old co2 canister.

      +steve64464 If you look online you will find refilling kits for paintball canisters that look suspiciously like a machined T-piece with a washing machine shut-off valve on the side for venting excess gas. You attach the device to an inverted pub CO2 cylinder (so liquid comes out) and then dose the CO2 into the sodastream cylinder. You have to weight it accurately beforehand as the fill is based on weight and has to allow for expansion. Any excess can be vented until it reaches the desired weight.

    Btw, it couldn't be too hard to make a soda-stream like device.
    Co2 bottle from a welders supplier.
    Maybe turn some nylon round-stock on a lathe.
    Small tabletop lathes are quite cheap nowdays.
    I thought about buying one. But didn't , what with my World of Tanks addiction etc. No time.

      +Flapjackbatter There are lots of videos on how to do it just like that. You don't even need the lathe work! You can buy all the parts from Amazon, including the CO2 tanks.

      +Coffeehound Yeah, and just carbonate directly into standard plastic drinks bottles too. Of course, they might explode..... But that's all part of the fun.

      Surprisingly, those soft drink bottles are pretty tough. If you have a pressure regulator on the tank, and have it set to a reasonable level, you won't have any problems, assuming that the bottles are in good condition. If they are nicked, scuffed or otherwise damaged, don't use them!

    I hate to say this but... I'm fairly certain cheap champagne is about the same price as cheap wine. Like 8 usd will buy you a bottle of either lol.
    ON THE OTHER HAND. Maybe get yourself some Jack Daniels and give it the bubbly treatment, that'd be a parlor trick.

    Was tried live on air on a local radio cooking show. Made a big mess and not very good wine. Just spend the extra on the wine.

    I'm shocked a DIYer as thrifty as yourself even owns something as terribly overpriced as a SodaStream. Just get a nice big, cheap cylinder of CO2 from a welding supplies store.

      You have to SLOWLY open/equalize pressure. and also cool it near freezing before (but not freeze it).
