The challenge with the iPhone demo is you acted as the pivot point instead of the. phone. I throw my iPhone 11 on a tripod with an arm to rotate the phone; I can stand in one spot rotate the tripod head until the last image when I need to move out of the way for the last shot. The 11 doesn't require multiple layers (high/low in same spot), and I completed an entire floor in less time than you spent on one room. I haven't used the Ricoh Theta, but I would caution viewers that this demo of the iPhone isn't a great representation of how to use it with Matterport.
My frustration with both is that I want access to floor plans (even without measurements would be fine) without buying a $3k+ camera as required by Matterport.

As mentioned in the video the IPhone 11 only needs one rotation. This was an example of iPhone X which requires 3 from each spot which makes it difficult with a tripod and using the iPhone as a pivot point for up to 27 shots in rotation is very difficult and dizzy.

The Iphone 11 pro looks amazing, but like you said the time and effort it takes to capture everything is awful
I currently use the Iphone 11 pro for small spaces and my theta V for big spaces
