For years I've been eating scrambled eggs because I was afraid to get sick from runny yolks, I just started eating eggs overeasy and medium, and wow! They taste amazing!
THANK YOU for explaining everything you did, why, and what to look for. I have found so many videos where they are super vague but this was INCREDIBLY helpful, thorough, and concise. I’ll be trying this tomorrow morning!
Great info, I've been cooking since the late 80s and I learned something new! Ty I've also noticed having eggs at room temperature helps with not breaking the yolk.
Wow, you actually made the process easy--I made an egg this way today & it came out just right. Historically I've been queen of half-burnt/half-undercooked fried eggs with chewy edges and runny Egg Whites. Gross eggs are over for me-- thanks to you!
I started doing this immediately after watching. I dropped some butter in my nonstick pan and just started spreading it around with the tip of my bread knife. It was at that moment I knew... I fucked up
Just got a part time job at a breakfast restaurant because I'm broke but also want to learn some skills. I like that some of the terminology you used makes sense. #progress
Wow thank you so much, I could never make my eggs just right. After watching a literally got up to make an avocado toast with an egg on top. The egg came out perfect 😗👌🏼
I learned how to flip an egg with no spatula with a slice of bread. Skillet out of cabinet, bread from bag. Practice that way. It's all in the wrist! She flipped that perfectly!
Leap is starting a.k.a. a big test at the end of the year and I want to cook a good egg like this in a sandwich along with it and eat that because I really want to know how to cook eggs better thank you for showing me this
Perfect. Seems very few grill chefs know how to cook a medium over egg. My feeling is when there busy they just can’t be bothered and it’s always over easy.
This was actually cooked to long in my opinion, but I use a compatible spatula for my egg pan so that it doesn't scratch. That gives me ability to puncture the whites sooner so they can get done allowing me to flip them to cook on the other side. It gives you more of the runny yolk & fully cooked whites.
Mmm if a restaurants busy I wouldn't bother. Even if it is cooked perfectly it needs to get to your table in about a minute or it will carry over and loose the runniness.
I always have issues getting my egg perfectly medium bc I love the jammy yolks where it isn’t running right out but I always get it too runny or too hard. Even breakfast places have a hard time bc I tried ordering them medium at ihop and I just got a sunny side up egg with a pure liquid yolk
That is hard! Especially with frying an egg you have such a small window of time to before they go from jammy to hard. Even if it’s cooked perfectly at a restaurant the time it takes to get from the window to your table can over cook it from carryover heat. Honestly, for jammy eggs I would recommend poaching or soft boiling. You can control the factors there a lot easier and the yolk isn’t flat so there’s more of a window!
Thank you! Now that's how I like my eggs. Just about anywhere I eat out never gets it right. Most of the time my eggs Benedict have runny whites even. Yuck! And all my over mediums come out over easy. too runny for me.
Im coming here almost a year and a half later and im now able to make almost any type of egg but this video was a big help cause I only knew how to make scrambled eggs. And this video almost has 50k views and almost 1000 likes much love and thank you.
The cook at the kitchen where I work always makes the perfect eggs over easy and medium and I always wanted to know how he does it...thanks for the video! I know what I'm doing for breakfast before work tomorrow
The trick is 'Patience' when you cook an egg, I always do mine starting on a medium heat so that the white starts to show immediately, then turn that heat right down to 2 or 1, after around 10 minutes perfect egg 👍
I cook my over medium eggs in half the time it took to cook these and without all the fuss, and nearly identical results with higher heat. What part of this slow approach aren’t I getting?
Thanks for a great, easy to understand tutorial! How do you cook more than one egg though? If I cook them one after the other it takes a long time and the first is cold. Thanks!
CHICKENS ARE AN AMAZING THING! My big secret for mastering eggs is don’t be afraid of ruining them. Mess them up! Then, once you’ve messed up enough of them you’ll be really good at them.
@@cleavercooking Believe me! I HAVE mastered the messing up part to perfection! BUT... I make THE best creme brulee EVER!!! It's a great way to use up eggs! Thanks again for your video... oh, and BTW, I LOVE your hair! Ah, youth!
About 3 1/2 minutes if I recall correctly. On the line I cook them at medium-high heat and it goes a lot faster but its takes a lot of ruined eggs to get it down with higher heat.
I hate when I order overmedium eggs at a restraunt and the eggs are super running. When I complaint they always say that's the way overmedium eggs are cooked...then I end up just ordering scrambled eggs. Why is it so hard for cooks to get it right. This happens alot at baker's square.
Because, even as previous comments in this thread show, people have different ideas of what an over medium egg should be and to be honest, it is the hardest type of egg to cook on a busy line. Your window of error is about 10 seconds and you have to account for everything else going on that plate and the timing, along with all other plates going to that table, plus keeping track of the next three tickets you’re already working on. If you overcook it it is sure to be sent back so most cooks err on the side of undercooking rather than over. In short, ordering scrambled is a much safer bet if you want it right every time. Over medium is just a lot more chance for error.
Seems like your heat was still a little too high. You ended up with a combination hard/easy rather than a consistent medium. Really hard to get that perfect jammy consistency on a pan, but I keep trying. Thanks for the pointers!
I've been ordering over-medium eggs for years....I never get them. If I'm very lucky I'll get over-easy with completely cooked egg white..often times though I get eggs so undercooked there's still some liquid egg white.

would there be an issue with using a plastic fork to poke the whites?

Did you keep the egg on the pan for another 3 mins and 30 secs after you flipped it? Also thank you so much for this!! Best advice :)
Nope, pull it off
Can you put a link to where you bought the frying pan from? Thanks
Honestly do not remember. Look for something heavy. Light-weight or branded/colored pans like Tasty are usually a pos.

@@cleavercooking - What? Me? Food preparation? Never! 😋

Seasoning with salt before the egg is finished can make them break down and become watery.
Closer to over medium well
Thanks for a great, easy to understand tutorial! How do you cook more than one egg though? If I cook them one after the other it takes a long time and the first is cold. Thanks!
Just add them to the same pan, rotate the pan so the heat alternates between eggs if one is cooking faster than the other
*Use Silicone utensils on non stick pans. Plastic will scratch it.
I like it better on medium-high with slightly crispy edges
See and I think that's gross. And that difference in opinion is exactly why no one likes to work brunch.
Use a rubber spatula to spread the whites won't scratch your pan

What if u wanna cook 2? 🤔
Go for it, rotate the pan for even heating.
Wish literally any restaurant could get this right. It's either an explosive runny yoke or solid 100% bone dry
Seems like your heat was still a little too high. You ended up with a combination hard/easy rather than a consistent medium. Really hard to get that perfect jammy consistency on a pan, but I keep trying. Thanks for the pointers!

Why does she look like she had pigtails right before this started and someone pranked her by cutting one side off
Is that a jammy egg?
Over medium should be jammy on edges, runny in the very center.
You have to use butter there’s no compromise

I've been ordering over-medium eggs for years....I never get them. If I'm very lucky I'll get over-easy with completely cooked egg white..often times though I get eggs so undercooked there's still some liquid egg white.
How can I fry an egg so that the entire yolk is jammy but not hard, is that even possible?
I'd go with a poach or soft boil. Typically, frying has too direct of a heat source to provide even cooking throughout.
Do diner and breakfast cooks touch my eggs with their fingers?
Only the lunch cooks.
That hair do
When I flipped egg over..failure!! 😂
It happens! Try, try again.
You’re good at cooking. I am not. 😂
