Arhar dal is my all time favourite. Although we make it very differently in the north. We boil the Arhar dal with only salt and turmeric (and never a tomato - adage goes it ‘spoils’ the texture of the dal - not sure how true that is). We then make a tadka to pour over this dal. A simple version only involves ghee, hing, jeera, and green chillies. A more elaborate one starts with the basic tadka, and then garlic is added till it lightly cooks and makes the ghee fragrant, then onions are added and cooked on low heat until caramelised. We don’t add any sugar ever in our dals, esp when we have this elaborate version of the tadka and the caramelised onions bring in the needed sweetness. Once done, pour over this tadka on the dal, garnish with coriander while serving. My Bengali husband raves about this version :-)
We saraswat brahmins make dalitoy of this tuvar dal . . . without onion garlic ginger . . . (phoron of curry pata and mustard seed) And Maharastrians make a tasty dal called "varan" of tuvar dal with just a phoron of hing . . .

Saw this recipe pop up on my feed, noticed I had everything for it and gave it a try. What a wonderfully tasty dish, I only had 2 issues, how long to cook the lentils, 6 minutes with a natural release did the trick for me, and the salt level, it was a bit salty for my taste, but I think I may have reduced the water a little too much unintentionally as mine ended up quite a bit thicker. Still, a super tasty easy dish!

In my mother's recipe, in the step where dal is being pressure cooked with tomatoes, we pressure cook it with 1-2 whole garlic pods, a dash of turmeric, a dash of oil, and a slit green chili instead. And for the chhok, we put ginger juliennes, shahjeera, dry red chili, diced tomatoes and a little pyaaz. That's the variation

I make this dal in U.P style. Phodon is of kadi patta, jeera, chilli, 3-5 cloves of garlic roughly crushed & hing. When d dal is done, add a spoon of Desi Ghee. Can't imagine arhar dal without garlic, hing & ghee.
No garlic, onions or coriander powder? Also, an indication (in minutes) of how long to boil the dal would be appreciated. Should the dal be added to boiling water and then the timer started when the water (with the dal in it) comes back to a boil?

There are a 10,000,0000,0000 ways of making dal , but *the bong version of roasting the dal* before boiling is one that makes me salivate as i write ! I noticed the lemon on the side ( saw it in the market ) the japanese have a similar version. so i would assume that it is common in the North East.

Try this Arhar dal recipe Take clean arhar dal don't wash Roast the dal in cooker 2- 3 minutes to reduce rawness , then low the flame put require water in dal and add chopped 2-3 garlic cloves, give 4-5 whistle in pressure cokker.. After that tadka.. you can use ghee and oil both.. M not a great chef but I always follow this recipe.

So I’m Goan and my mother in law is Bengali. She taught me to use a wooden spoon. Soak the dal, no pressure cooker and remove the scum. Game changer!

My mom always dry roast arhar daal before boil like bhaja moong daal and it's enhance the fragrance to another level. Hing, ghee and lemon juice must.

We usually count the Whistle of the pressure cooker to measure the time. 2/3 whistles are enough to cook the lentils.
