You did not mention piston speeds as that is very important for high RPM . Slow piston speed is good for engine performance. The valve size does not matter much if the note size is changed by few mm.

In Long stroke piston travels more, but in short stroke it has more revs. So in both the piston travel same and mechanical wear tear should be equal.

I am also a Royal Enfield rider. It is a high torque engine. Koi bhi raaste mein yeah bohut power produce karta hai. Pick up is low but the torque is high. Yehi magic hai.
