Hong Kong Style - Must Try: Huadiao

Using alcohol in cooking has been a common practice since ancient times. The Japanese use sake, while red and white wines are incorporated in western cuisines. In China, Shaoxing wine is the most commonly used. Huadiao wine is a premium-grade Shaoxing wine. Also known as “Daughter’s Red Wine” (nu’er hong), it has a rich and mellow aroma, and can enhance the taste of meats when used in cooking.
