Agreed. I could watch a 30 minute long version of this for all the restaurants in Hong Kong. Maybe they could pad out the time by showing more of the cooking process

As a Hong Kong-er, I love how Lucas always try to go into the cultural influences of each dish/practice. It really help the audience to understand why things are done the way that it is.

Cooking with kerosene was very common in Hong Kong until town gas become popular.

I like Lucas speaking Cantonese. That wok chef is awesome with his yellow fit & white rubber boots. He was so nice to show Lucas the barrel of kerosene. I would eat the green bean stir fry & the jiew yeem squid. 😊

Thank you Lucas!!! my family is heading to HK this summer and will order the same exact dishes. We also have reservation at Mott32 for their Crispy duck (unless someone else has a better recommendation) and Yat Lok for roasted geese.

just love lucas! i wish he had a series traveling in china and explaining the history and culture of different dishes. i would watch it all in one sitting and revisit it often. the complexity and subtlety of chinese cooking has captured my imagination after making a couple of his recipes 🙃
