I didn't have tempeh, but I did have some seitan in the fridge that I made earlier this week. So, I marinated that and air fried it for the gyros -- SO good! I really love that marinade. I'm going to marinate the rest of the "meat" overnight in the fridge for tomorrow's lunch! Can't believe how fast that came together. Thank you!

Thank you for debunking the protein myth for vegans and vegetarians I hear this so often 'I won't get enough protein,' if I don't eat meat. If anything, Americans eat too much protein. Average needs are for a man 56 grams, a woman 46, that is not much.

These recipes look great! I can't wait to try them. Please share where you bought the high protein pasta and the Kontos greek style flatbreads. I haven't seen those in NOVA markets. Here's a tip for you. Just by chance, I found Oh! Market International grocery in Manassas. They have great produce and spices, grains, noodles, etc. from Latin America, the Middle East, South and East Asia, the Mediterranean, and beyond. They also have a little food court with small counters inside. It takes a while to navigate, but wow is it worth visiting. Take a list of obscure ingredients and spices you use often and price check there.
I’m in Vienna area, and I’ve seen high protein pasta at Whole Foods, Costco and Walmart. Usually Banza brand chickpea pasta, but there are other brands available
Oh that's awesome! I'll have to make a drive over! My closest grocery store is GIANT, so that is honestly where i shop most of the time and where I found the pita bread and pasta.

I’ve used sunflower seeds before and also just some white beans. When you are putting things in a high speed blender it all just becomes creamy! Oh also tahini would work, it’s basically sesame seed butter
Agree with the other reply - I can’t do many nuts and sub in rinsed cannellini beans (white kidneys). They’re really mild and not too soft, so they thicken, add protein, and don’t change the flavor of recipes.
Such a great question. The thought of needing to eat a complete protein in one meal is outdated science. They have since proven that your body can easily compensate. So you can drop that notion and just eat without the stress. :)
Tried Tempah last week, marinated like your recipe for "Facon" and it tasted a little chalky. Is there something I missed? Love all your recipes. Thanks for sharing.

Perhaps we. Would use white beans or cananelli beans. In place of the tofu

You can use tahini or white beans! (or even skip it and add a little soy milk)

Noticed that you didn't mention if the cashew was soaked in boiling water. The sauce was not cooked
No, my high speed blender doesn't require soaking before. But you will need to soak the cashews if you don't have a high speed blender.

If you steam the Tempeh before you marinate it, you will get rid of some of the funky taste.
