The BEST Vegan Scones! 2 ways! Dried Fruit/Nuts & Chocolate/Nuts

  • Preheat oven to 425 degrees F.
    3 cups flour
    1/2 cup sugar
    1 tablespoon baking powder
    pinch of salt
    1 cup packed virgin coconut oil
    1 1/3 cups coconut or other soy milk
    nuts, dried fruit, chocolate chips as desired
    Combine flour with salt and baking powder. Cut into it the oil using a pastry cutter, leaving pea-size chunks. Add milk and mix lightly, don't overmix or knead, just enough to hold together. Mix in the added goodies as desired.
    Pat or roll out 1/2" thick. Cut into triangles or circles. Bake in hot oven for about 20 - 25 minutes until golden brown.

    I’m so thankful! My late kiwi Mum died with most of her recipes still unwritten. We finally found a version of her scone recipe in the records of a friend of my little sister’s… she had written all over a scrap piece of paper in her unique hand, so I had a starting place but they did not turn out. Now, eating WFPB, I really thought I’d never have another. These look wonderful!

    Oh Miyoko, these scones look scrumptious. After years of begging Hubby to try some of my vegetarian and vegan meals, a Doctor's appointment changed his mind. He has finally embraced and really enjoys the healthier foods. He used to love grabbing a fresh scone and coffee at the bookstore, but that changed when he cut his sugar consumption. Thanks to you, I now have the perfect substitute for his birthday "cake". Fresh scones and homemade vegan butter. The goats are precious, and you are an incredible blessing to this community. HUGS

    How lovely! I love seeing the goats, what cuties! Your recipe is so similar to mine. I love using virgin coconut oil too, for baking scones, and biscuits. With the chocolate ones, I might have added dried cherries instead of the hazelnuts. I also like mine "chubbier" and slightly less baked. A "must", with a cup of hot tea!

    I make traditional and vegan scones. I also use coconut oil and find that they are the best tasting. Thanks for another fantastic recipe and all the luck to Annie!! 🍀

    Do you know what? Miyokos vegan butter is the best I've found. Lol. Also pastry flour, ( the most common form of flour for sale in the UK), makes for a really light crumbly texture.
    In England scone is pronounced to rhyme with gone.
    In Ireland scones are frequently made with buttermilk, so vegan fermented substitutes make really good scones.

    Hi Miyoko, I have a quick question I’ve been thinking of buying the almond cow to make my own milk, do you think it’s worth it? I saw your episode a few months ago when you made milk using the almond cow.

      For making milk to drink, I find it really easy to use and clean. It works with everything from almonds to soybeans, so it is really helpful.

    I'm sure they taste delicious but the reason we eat at all is for nutrition, not indulgence. As vegans, how can we be concerned with the health and welfare of animals, yet disregard that of the human animal? Even a "treat" should be something that not only tastes good, but is good for us. I've had delicious vegan scones made with health promoting ingredients that didn't include liabilities like white flour, sugar, and saturated fat. As someone who improved and eliminated a slew of illnesses caused by poor diet, I am a huge advocate of food as medicine.
