Yo this is soo good! i used a tomato , half an onion, butternut squash, sweet potatoes,some parsley, a bay leaf and regular potatoes. when it gets out of the oven...the smell is phenomenal! and it taste sooo good didn't use vegetable stock just water and the chilli powder and hot sauce is such a greaaaaaat idea it made it so much better! i'm really like beyond words! Im also bit obsessed with healthy eating so I really appreciate all the beautiful vegetables and olive oil that went into the dish. Topped it with a dallop of goat cheese and toasted pumpkin seeds, absolutely freaking delicious. I cant thank you enough!

I had never had butternut squash anything before, until I went to Scotland two summers ago. On the way to Loch Ness we stopped at a small diner for lunch that offered a soup and sandwich of the day and the soup of the day was butternut squash. I was a bit skeptical at first, but that aroma quickly won me over, and then I tasted it. Wow! One of the best soups I have ever eaten and have since searched for a recipe that duplicates what I experienced in Scotland. I think I may have just found it or close enough to satisfy my craving. This soup is so simple and has an amazing flavor. Must make a batch or two to store in freezer now. Thanks for the recipe!!!!
Went to a friend's house and the toppings were: roasted potatoes, curried pistachios (so good), basil sour cream, bacon, and (of course) green onions. mmmmmmmmmmmmm...............it was amazing paired with the soup....
My hubby and I made this tonight and it was soooooo good. Family loved it. Heaps of left overs. Very tasty and delicious!!! Thanks for the awesome recipe!!!
I've made this. It is delicious. One bowl I topped with a dollop of cream cheese. The other I topped with a dollop of sour cream. Both are absolutely delicious. I add tumeric into the soup as it's cooking and a little bit of nutmeg and ground mustard seed. I love to play with spices. Allspice and fennel seed go well too. I sprinkled those on before roasting. Also the roasted veggies are a meal on their own paired with any meat I cook.

A friend and I were at an Austin cafe had the best butternut soup the waitress said it was made with vanilla yogurt butternut squash maple syrup all spice and chicken broth. Combined in blender and then heated. They served it with a Pistachio Biscotti stick my friend said she could eat a bucket full it was so good.
I just made this and must say it is good but sweet as expected, the goat cheese is good but may not be for everyone as the cheese has a very sharp flavor. Thanks Laura
Try using Magor (its a cheese with marscapone and gorgonzola) instead of the goatcheese!! I always add it in the pan ... Also i put some dried mint on top ... DEVINE!!
Looks good! One small suggestion... Get all the soup out of the blender by adding a bit of water or stock - whatever you are using, and run the blender to wash all that soupy goodness out of the blender. Also, this would be a good time to throw your soup base into the blender, rather than into the soup pot. Have it all mixed before you put it in with the soup, so you don't need to stir a much to get it mixed in.
Pro tip! If tobacco has been sitting in your cupboard for a whole shake it up cause when it sits, the hottest part rises. So give it a shake before every use unless you wanna burn your mouth off :)
Oh my goodness! This is the best butternut squash soup ever! I had the use chicken broth because that's all I had on hand and it was "YUMMY"! Just saying! Da Bomb!

I roast the butter nut squash seed and sprinkle them on top for a textural kick. Adding some heavy cream is very nice also
