Andy, LOL! You made me feel even older, now that I know it has been 782 years since your last video! I think your use of chives was a stroke of genius! Fresh spinach is the ONLY way to eat spinach. It's a law! Your dressing looks heavenly!! I think I can do this. I'll remember to use the best bacon, although I might use sugar substitute. Juanelo1946 John, I fully understand using a sugar substitute, I try to avoid sugar pretty much too, but there are a few dishes where one just has to have it, and I think that if they are eaten only occasionally, and if one does not eat big hunks of candy, or ice-cream, and does not drink soda, then an occasional authentic recipe like this on a big bowl of spinach is worth the momentary indulgence.
I hope you don't mind I shared your whole cooking playlist to my fb. I think your videos are just the bee's knees and I think many of my friends will enjoy them. Great old recipes that seem to come from a lot of early American immigrants. Good stuff. Thanks for making them.

Thanks for your comment, yeah I did turn the heat off within a couple seconds of when you said. We love this dressing, despite its high sugar content (high carbs) but served over a fresh spinach and a bit of hard boiled egg, this is fantastic.
Hi Andy! I have been told that swiss chard is a very good spinich substitute. I am growing chard right now so I will try this dressing with the chard! I like the towels you have too :-)

@jamesmarconi7502 I'm from PA Dutch/Amish counrty Lancaster county. From old Cookbooks in Pa all the way back to 1789 the recipes have always called to thicken it with a small amount of flour. Just Google Pennsylvania Dutch bacon dressing. It will contain flour to lightly thicken it. It's great on Potatoes, celery, and eggs Pa Dutch potato salad.....so so good. Google it. Also get yourselve an Amish cookbook. Lots of old German. Pa Dutch recipes. You won't be sorry. By the way his looked good but not the same.

That video is 7 yrs old and the pan maybe 3 times that. I don't remember where we c got it, but it is about 8 I niches in diameter
so i wait a lil longer till i put my green onion in...and i only put half a cup of sugar
Back home we use fresh lettuce from the garden and call this wilted lettuce salad.

The important point is to use the BEST bacon you can find. Don't use the cheep mass market junk.

Hmm. I livei in PA and I know bacon dressing as a syrupy consistency. Yours isn't. Worth a try, tho. I never made not lettuce salad and want to start.
