To my ear, this technique reminds me of some spices... just a touch is enough. To play these could get very boring very quickly. That's the fascinating thing about keyboard playing... the combinations that "work" seem infinite IF you know how and when to use them properly. I can poke around for hours and produce, to my ear, beautiful sounds... not songs, for sure... just beautiful sounds. Some days that's just fine with me.

For those who can't play ocasional tenths, there are ways of rolling 1-5-10, or in early jazz you can just use simple stride/swing bass with notes 1&5 on beat one, then a higher triad or fatter chord (occasionally) on beat two, and in any convenient inversion of course.

This is just my opinion as a keyboard player. To me, this is not about stretching, but finger technique. I hope this helps.
@Impromptu naturally pivot on the fifth... but the preceding note is the root on finger 5. I'd like to see it. There's a lot of denial around re the advantages having a wide span. If you're only making an octave you almost certainly cannot retain position on the G with finger 2 and made the E with finger 1.

Good Practice for a beginner like me
My hands are so small, I can barely reach an octave (I can reach it, but it’s hard). What can I do about this?

You need to be able to reach a solid 10th to follow you in this. ....
I much prefer your second technique, which moves the third higher. Low thirds should only be used with discretion, or not at all. Also, I believe that rhythm and harmony should be shared, interactively, between the two hands and that maintaining any fixed pattern in one hand requires strong justification.
I agree wholeheartedly that it's good to break up the chords and avoid placing full chords on all the beats. The piano is not a banjo or rhythm guitar after all. Even in ragtime and stride piano, the full chord is only played on every second beat. Your explanation of "seconds" is a little confusing. There's a good reason for calling them ninths, and yes they do belong to the chords, just not to the basic triads. Typically they are played in the right hand, because they must be high - hence "ninths".
When playing solo jazz or blues I tend to keep any left hand chords quite sparse, and as open as possible. My right hand usually adds another harmony note or two as well as playing the melody.
